We never use soda yeast eno etc... our ancestors use to add todi/sendi/palm wine/coconut extract (all are similar only fermented coconut water)... I use to love those idlis... Very tasty fluffy...
Very good tips for the beginners. A small piece of suggestion: Do not wash rice so many times, because, rice is already stripped of most of the nutrients , after polishing. You can wash just twice, to retain atleast whatever little is left.

If I make idli like this it will be so sour , I have to throw idli. I make idli without any of this method. 1 cup urad dal 1.5 cup idli rava. Grind dal at 6 p.m., add rava , mix it properly , close with a plate and keep near the gas . Next day it will ferment properly .bake idli . Over

Don't use use and throw bottle and fibre utensils.add salt at night it helps bacterial growth and no need to stir in the morning.
