Now this I can do, I absolutely hate circular needles my hands hurt. I gave up & undone the first ones I started. Its better with double pointed needles

Does it matter how I cast on? If I use a different cast on method will it be the same? Or will it turn out different?

No, as long as the cast on is a bit elastic (since we want the cuff to be elastic) it will be fine. :)
