It's called chilli bean sauce. You can google it and Lee Kum Kee brand can be bought in local supermarket, but there are also cheaper brand which shouldn't make much difference. It's used in ma po tufu recipe also.
I dont find him speaks a lot nonsence in his video filming He is only guiding the media learners to follow his cooking procedures This is a good teaching speaking guilding cooking channel to those who wants to learn cooking
