Recipe:

Step 1: Assemble & Bake Pizza
Ingredients
* Proofed dough
* Grated low moisture mozzarella cheese
* Grated white cheddar cheese
* Pizza sauce
* Olive oil
1) Liberally coat sheet tray with olive oil and stretch dough to edges.
2) Cover the dough and let rise at room temp for 2 hours
3) Combine and moz/cheddar cheese and spread to the edges of the pan to create a cheese crust
4) Add the sauce in strips and bake for 15-20 minutes or until golden brown
Equipment
* 450F preheated oven
* ½ sheet tray
Step 2: Pistou & Plate
Ingredients
* Salt
* 1 lg bunch fresh basil
* 1 cup parsley
* 1 Tbsp lemon juice
* 2 cloves garlic
* Castelvetrano olives
* 1/4 cup evo
* Burrata
1) Grind salt, garlic, and green olives until a paste.
2) Add in basil and grind until smooth
3) Stir in olives and then gradually add in the evo
4) Season
5) Plate pistou and fresh burrata on top of cooked pizza
Equipment
* Mortar and pestle
* Microplane
* Cutting Board
* Plating spoons
VEE + NICOLE
RAJAS CON CREMA PIZZA
Step 1: Make the Chile Rellenos and Raja Crema Sauce
Ingredients
For the Rellenos:
* 4 Russet potatoes
* 1 bowl Shredded Monterey jack cheese
* 6 Poblano chiles
* 3 eggs
* ½ c flour
* ½ tsp salt
1) Boil potatoes until soft. Mash and combine with cheese
2) Roast poblanos until blacked and blistered. Put in ziplock to sweat them out for 5 mins. Remove stems, peel, and deseed. Cut a small slit in the middle and stuff with potato/ cheese mixture
3) Separate the egg whites from the yolk. Beat the egg whites until stiff peaks form. While continuing to beat on low, pour in yolks one at a time until fully mixed in. batter should be light and fluffy.
4) Roll peppers in flour then gently dip in egg batter. Drop in fryer for 3-5 mins per side.
For the RAJA sauce:
* 5 roasted poblano peppers
* 1 tbsp butter
* ½ of a white onion, thick slices
* ½ tsp salt
* ½ cup mexican crema
* ½ cup milk
* ½ cup grated oaxaca cheese
1) Cut peppers into long stripes.
2) Cook onions in butter until translucent.
3) Add peppers, crema, and milk. Add cheese. Cook until nice and creamy
Equipment
* Torch
* Sheet pan
* Ziplock
* 2 small bowls
* Hand mixer
* 1 large bowl
* thongs
* Fryer
* Sheet pan w. Rack
* Cutting board
* Knife
* Wooden spoon
* Medium Saucepan
Step 2: Assemble da Pizza
Ingredients
* Pizza dough
* Raja sauce
* Shredded Monterey jack cheese
* Shredded Manchego cheese
* Shredded chihuahua cheese
* Minced Garlic
* Fresh Oregano
* Finished chile rellenos
* Squeeze bottle of mexican crema
* Chopped cilantro
1) Roll out and shape dough
2) Layer pizza dough with raja sauce, 3 cheeses, garlic, oregano.
3) Top with whole chile rellenos, more sauce, crema and cilantro

* Pizza dish
* Ladle
* Spoons

Lucas being brutally honest and straight about the tastes and quality of the foods elevated this episode WAY beyond the past ones. You could tell it made everyone uncomfortable, and that worked. No kiss ass today folks!
I do think they should've kept it a secret who cooked what, but otherwise that was the perfect deconstruction.

It's a good thing too, because even on video that pizza crust looked undercooked. They'd probably have lost a lot of credibility if they had tried to pretend it wasn't.

It's hard to imagine that in the days of long, long ago, Trever was the shy quiet one of the group. Josh infected him in the best and most wholesome of ways.
Just waiting for Josh to fully induct Trever into the same cult, he'll show up on camera one day tan, with some muscle mass and a real hair cut... and probably have forgotten to wash off the blood from the night before's sacrifices to whatever unholy "crossfit" god that Josh does his sacrifices to.

I loved the Australian joke and then when she said Chef. It had that impression of "if I don't do this I'm fired." lol. She adds a great dynamic to the Mythical Kitchen.
Was the same with Trevor and Vi. Soon she'll be just as wonderfully insane as the rest of them.
Vi and Trevor also went through the same shyness at first, but now the insanity has rubbed off on them. Won't be long until Lily is insane too. 😂

Lucas was so right about the crust thickness. If you're going to call it Detroit style, that's a fine thickness, but Sicilian is notably thinner than Detroit style, so... pick one.
It's definitely a Detroit style pizza. I'm not sure why he was trying to say otherwise.

You can see the evolution of Trevor become more of a bro in these cooking videos. Mythical seems like the time in college when you've pushed all your year long projects off and you're trying to finish them before the turn in date, but you're still trynna go to that party.

To be fair, Rachel Ray will be the first to say she's not a chef. She's a self taught cook.
Gordon's mostly a caricature these days, but he's built 3 star Michelin restaurants. I think Josh mostly rags on him in jest, or maybe just the character he plays on TV these days. Rachael Ray definitely built an empire, but it didn't start with being a chef like Gordon, rather a fantastically marketable home cook

I'm really wondering: how do you make sure the pizza's of the two teams are ready at the same time, so one of them isn't completely cold when tasted?
Do you make a second batch off camera, which you put in the oven at the same time?
Assuming they just keep it in a warn oven and wait for the other to finish, so it's fresh to serve.

the "oil pan" was actually the assembly line parts trays, some being plucked off the line
this is exactly why I suggested having more than one judge for these kinda things, because different people have different tastes and if you wanna go for specific tastes as putting cold cheese on a hot pizza eitheer make sure the person you're cooking for will actually, yknow, LIKE the food you're making or have multiple people around to make a fair judgement.
Also the only reason Josh won was that, despite the fact he put on a bunch of stuff that didn't work for the judge objectively it was a better pizza because it was more cooked. So yeah make sure your food is cooked properly if you're cooking for a guest and wanna win a cooking contest.

Guys, even I could tell you that adding a mountain of cheese on the pizza PLUS very heavy toppings will stop the base from cooking properly
