also if you want, you could boil those shells in sugar water first, it turns the whole peel into candy so you can eat it with no unpleasant fiber and starches, it's often used to candy slices of lemon or orange with the peel still on for edible decoration, and that way you can eat the outside of this cake as well :)
I miss the grapefruit and orange trees we had in my backyard, both trees got foot rot and we had to remove them. The grapefruit would get to that size, and forgot about it until now. Now I gotta go get me some grapefruit and try this.

I made this recipe, it turned out great! My family really likes grapefruit, so I decreased the amount of creme, and increased the amount of fruit. When it got watery I patted it very lightly so that it was a tad less watery. Not gonna lie I messed up the first shell I was cutting, so I just made that one the filling instead. As for the innards that weren't used, I tried turning it into a jam (it wasn't the greatest unfortunately).

I know this is an old comment, but I'm wondering if you remember it being bitter at all where the cake touched the sides of the grapefruit peel? I'm worried that the bitterness of pith of the fruit peel will make whatever touches it bitter, too.
@ it was a bit bitter, but not too bad. The sweetness and tartness of the grapefruit helps overwhelm some of it so long as your careful not to scrape the sides too hard. If your worried you could line it with something like a hard crack sugar shell, but that would make the overall preparation more difficult. I've never tried to do that though since working with sugar can be tricky. All the sugar coating would really do though is create an edible barrier so your less likely to scrape at the peel. Sorry I'm not able to be more helpful. I'm not a baker, just someone with too much time on her hands that bakes as a hobby.
I haven't bake a cake for a very long time. My son was in kindergarten the first and last time I bake a cake. I made cupcakes for his fist time starting kindergarten. And yes, I know how to bake. Grapefruit makes my mouth itch. I hate grapefruit its sour. But I love the video. I got to start baking again.
