The "overcooked" pie tastes better. You get a little caramelization going on there and that tastes good. I don't care if the filling isn't silky. I want it to taste good more than I care about pie filling texture.

Came back to this video while cooking a pumpkin pie currently! Thank you 🙏🏻 so many recipes say 35-50 minutes or some big gap. It’s so hard to know when exactly to pull it out.
For baking the pastry all the way through as well as not getting soggy 2 days later: blind bake it, remove from oven, egg wash it (like a sealer coat), bake for another 2 mins. Avoid temp changes after it's set to minimize condensation.
If you want that extra cook to have the cake be fully baked without the mushy center as seen in the "ideal" baked pie, use a foil tent. Your pie will be baked evenly throughout without that typical soft spot in the center.
It's good to use both a timer and learn when things are done by sight. Use the timer as a reminder to check and add time as needed. I often forget to check things in the oven without a timer and would burn them.
It is still good overcooked- more like a pumpkin tart and can be eaten by hand! Not everything should follow strict or adhere guidelines, cook at your own pace or measure!
The just-right one should definitely keep its shape once cut, so long as the pastry holds up proper. It should hold its shape like cold soft serve ice cream, a well-structured & set mouse, wobbling Jell-O that you can cut into cubes as eat with your fingers. Or like a potato mash that you can sculpt into shapes 😅 Curdled tends to weep and the pastry gets soggy much sooner; since the solids(proteins) & liquids(fat&water) split like a 1st attempt at a homemade mayo. Sticking to as exact a recipe as you can manage (changing water content will give you varying ready times and you'll be guessing). If you've got an eye for recognizing the exact consistency of the uncooked custard that you want, even better. (Pumpkins vary in moisture level after all, so adjusting your cream amount by eye is the power move) Then bake it often enough while keeping notes & making corrective adjustment instructions for next time. By version 10 (within a year) you'll have it down every time & have an eye for it. (And finally get the instinct to mess around too creatively out of your system. 😅) Getting the repetitions in w/o forgetting what you did last time is honestly the most useful thing. Holiday season is a great opportunity to feed your hits & misses to others so you dont lose interest after eating too much in one sitting

if you want color/caramelization try broiling slightly or baking it at a higher temp for less time; this gives you texture & color.
