Did these last night. Soaked some of the shells in hot tap water for about 5 mins. Those were preferred over the ones done with the dry shells. They were still stiff enough to stuff easily.
I made this over the weekend and it turned out pretty good. Just a couple suggestions to anybody that's trying to make this. The box of manicotti's we had had 14 in it. So we ended up with way too much filling. Probably cut the recipe in half. Also you have to watch any of the noodles that are not covered with bacon get really hard. If you cook the bacon till it's crispy some of the noodles will be overdone. Next time I'm going to try 300 for 45 minutes and then I'll start checking it with a meat thermometer to see if the filling done

I filled mine with smoked cream cheese...wrapped them in bacon. Then seasoned them with the powered cheese pack from cheap box of Mac and cheese....put it smoker for 1 hr...delicious.

This is the best one I've seen yet. I love your mixture! There is a manicotti shortage here, but I got my hands on some cannelloni. I served mine last time in a Caesar vodka sauce, it was amazing!

I don't use an oven, but suggest using the same temp and have some way to catch the grease drippings, so it doesn't drip on your oven heating elements.

Some else pointed that. It should take between 2 20 and 2 40 including glazing. My times can be a little longer due to filming. More importantly than time, check doneness of shells with tongs. Time can vary for every cook.

Tried this today on pitboss Austin xl...cook time to long for my smoker at 250...shells to hard to cut...was a disaster..I'll try again maybe smoke 1 hour and check...

I will check out Walmart next time I go to town, thanks. My local grocery store does not even carry buttermilk, I guess you take what you can get sometimes. :-)

Great recipe. I made these using the exact process but with ground venison and chopped jalapenos. Holy crap they were delicious.

I don't use an oven, but a grill with a lid is like an oven. Don't let the drippings hit your oven burners.

One problem with my cook times is filming the vid. Sometimes the lid is open longer to focus, film, etc. and the grill cools down some.

Sounds about right. Seems I was off on my math that day.
If I wanted to pan fry these or even bake these instead grilling them, what would you recommend?
If bake use same temps and times. Don't let the drippings hit your burners.

Great question and I'm not sure. You need fat to cook the pasta, so not sure if the beef will be enough. If you try it please let me know.

Sounds similar to where I grew up. We were about 15 miles from town. They do have a Walmart now, but it's still a good drive.
