  • Today I make Smoked Shotgun Shells on the Pit Boss Pellet Smoker. We'll take some Manicotti shells and stuff them with beef and cheese. Then, wrap in bacon and put on the pellet grill.

    I made this over the weekend and it turned out pretty good. Just a couple suggestions to anybody that's trying to make this. The box of manicotti's we had had 14 in it. So we ended up with way too much filling. Probably cut the recipe in half. Also you have to watch any of the noodles that are not covered with bacon get really hard. If you cook the bacon till it's crispy some of the noodles will be overdone. Next time I'm going to try 300 for 45 minutes and then I'll start checking it with a meat thermometer to see if the filling done

    Did these last night. Soaked some of the shells in hot tap water for about 5 mins. Those were preferred over the ones done with the dry shells. They were still stiff enough to stuff easily.

    I filled mine with smoked cream cheese...wrapped them in bacon. Then seasoned them with the powered cheese pack from cheap box of Mac and cheese....put it smoker for 1 hr...delicious.

    Great recipe. I made these using the exact process but with ground venison and chopped jalapenos. Holy crap they were delicious.

    Man, I can’t wait to try this! With a name shotgun shell I’d be putting some fire to it though. Perhaps a light pepper like habanero mixed in.

    Purchase a LEM Jerky Cannon for stuffing the manicotti. A lot easier and faster.

    I made these tonight. They were pretty good. I think I overcooked mine a bit though. I had no problems with hard pasta as some commenters have said. Anyway, 3/5 stars for what I ate. It was fun and tasty. Thanks for the video!

    This is the best one I've seen yet. I love your mixture! There is a manicotti shortage here, but I got my hands on some cannelloni. I served mine last time in a Caesar vodka sauce, it was amazing!

    Looks great but an hour and 50 minutes + 30 minutes is 2 hours and 20 minutes...not 2 hours and 40 minutes...

      Works like a charm.......stuffed instantly. It took longer to wrap them with bacon than it did to stuff them. Might want to look into a jerky gun for small batch runs. That worked really well....didn't see that coming. = )
      Edit; oh, by the way... ..your shotgun shells got rave reviews at Chucks, (my local hangout)............and yes I did tell everyone where I got the recipe from. ..= )

    These look awesome! Just one question, you said cook 1 hr 50, glaze then cook 15 min, glaze then cook 15 min, equals 2hr 20min, you said 2 40 when you pulled them, not a huge difference, just want to make sure I get best results tomorrow(using good bacon and some fatty italian sausage so they will have plenty of moisture)

      Some else pointed that. It should take between 2 20 and 2 40 including glazing. My times can be a little longer due to filming. More importantly than time, check doneness of shells with tongs. Time can vary for every cook.

    Wouldn't the uncovered pasta at the ends be bullets though? There's not as much grease from the meat/bacon to soften it up I would think.

      Hi Nick, Hard to say. Outside temp is always a factor and your cooker temp.

      I don't use an oven, but a grill with a lid is like an oven. Don't let the drippings hit your oven burners.

      Fat from the burger, cheese and bacon, so don't use ultra lean ground beef or fake cheese.

    Tried this today on pitboss Austin xl...cook time to long for my smoker at 250...shells to hard to cut...was a disaster..I'll try again maybe smoke 1 hour and check...

      One problem with my cook times is filming the vid. Sometimes the lid is open longer to focus, film, etc. and the grill cools down some.

      Hi Mike, I've not tried it, but the cook takes over 2 hours. The already cooked meat might get dried out.

      @@Armadillopepper I live 25 miles from town, I thought about ordering some online but I can imagine 75% of them being busted up by the time they made it to my door. I will check out Walmart next time I go to town, thanks. My local grocery store does not even carry buttermilk, I guess you take what you can get sometimes. :-)

    You stated the cook times are 1hr 50 min + 15 min + 15 min. So 2hr 20 min. Yet the total cook time is 2hr 45 min. Does 2 hr 45 min add in ~10 min to brush on bbq each time? Thanks!!! Making these today!

      If bake use same temps and times. Don't let the drippings hit your burners.

    I followed the recipe step by step and they turned out way harder than actual shotgun shells. Not sure where I messed up other than maybe my grill got too hot at times. Smelled amazing though :(

      @@Armadillopepper 2hrs 45 min @ 250. My beef and bacon were both pretty lean, so I'm gonna try again soon with fattier stuff.

    Wouldn't the Pasta be crunchy? It doesn't seem like there would be enough moisture to soften it.
