I honestly did not feel a big difference on changing the material of a fin. What makes a bigger difference in my opinion are things like fin rake (upright, neutral, raked), fin size (medium, large) and fin configuration. (thruster, quad, twin).
I will make a in depth discussion of this in the future, by comparing different fins in the same session.
