Recipe:
Mutton Rezala
Portion - 04
Mutton 800 gms
Curd 150 gms
Salt To Taste
Green Chillies 15 gms
White pepper Powder 10 gms
Kewra Water 10 ml
Attar 2 drops
Coriander Powder 7 gms
Garam masala Powder 3 gms
Refined oil Oil 150 ml
Cardamom 3 - 4 nos
Cinnamon 1 inch
Cloves 3 - 4 nos
Bayleaf 2 nos
Mace 300 gms
Onion 350 gms
Ginger 25 gms
Garlic 25 gms
Milk 50 gms
Sugar (Optional) 25 gms
Ghee 30 gms
Method:
1. Clean the mutton and marinade with curd, salt, white pepper powder and refined oil and leave it in the refrigerator for half an hour.
2. Prepare onion paste with green chillies.
3. Prepare a white paste with cashew nut, charmagaj and poppy seed.
4. Heat oil and fry whole red chillies and remove.
5. Temper the oil with whole garam masala and bay leaf. Add onion paste and cook for some time.
6. Add ginger & garlic paste and cook in medium flame till the raw flavour of garlic is removed.
7. Add the powdered spices mixture to the masala, salt and cook well on medium heat.
8. Once the powder masala is cooked, add the white paste and cook for some time. Once the gravy starts releasing oil, add the marinated mutton and cook well on medium heat.
9. Pour in 2 cups of water and stir well. Cover the pan and cook until the mutton is tender.
10. Check the seasoning and adjust if necessary. Add milk along with kewra water and attar and mix well.
11. Finish with ghee, gram masala powder, and little sugar.
12. Garnish with chopped coriander leaves and serve hot with steamed rice or paratha.
