Sam Animation planned you can tell cause he says this may be the last time you hear the boogie song so he’s obviously planned it

My guess is he's got the basic melody and lyrics all planned and simply alters them on the spot as he sings.
This might also explain why his boss fight songs in the game Oogie's Revenge are all slightly altered versions of the main song.

When Santa Clause was still not "The jolly fat man" he had Oogie Boogie, but he was just a bag. Then, Santa became SAnTA and forgot about Oogie. So, Oogie got carried away by the wind and landed where he is now. The creatures found him and gave him life, and so he turned on Santa. Santa Clause used to be skinny-er and that's why Oogie Boogie KNOWS him, but doesn't recognize him.
