They don't 'start' the catch with anything, the catch is the last part of the recovery, they get the blades in at the longest point of their stroke and do it together so what difference does it make?

Correct me if I'm wrong...but why is the stroke seat in a US Uni?
Because the rowers normaly can use any Uni to train ;) it is normal to change Uni at the end of the races.
