You did well in choosing safe places to eat in Peru. Al Toque Pez makes good quality food, mainly all Peruvian seafood dishes (not Japanese, except for Tiradito). Chef-owner (well educated, PhD in chemistry at UK) wanted an affordable place where anyone can eat, unlike his father's very expensive Japanese restaurant Matsuei. Sushi Maki Acevichado rolls and Tiradito (sashimi+Peruvian sauces, dish inspired by Peru's fishermen) are real mixed Nikkei dishes. Japanese influence started in 1973, when first sushi restaurant opened in Peru (to feed Japanese business immigrants). Prior to that, the few Japanese owned food places served Chinese (which some diners thought was Japanese) and Peruvian criollo dishes.

The "arroz con mariscos" is not fried rise, but a paella-like dish. If you want a "seafood fried rise", you need to get a "chaufa de mariscos". Some restaurants like "barra mar" have it. 13:05 the "side of onions" is what is called "salsa criolla" (onion, chili, coriander, lemon juice, salt, pepper). Some people don't like it and that's the reason they put it aside, but usually it's eat inside the chicharrón sandwich. And the "aji sauce" usually is for the french fries, not the sandwich. If you want a spicy chicharrón, you usually just add more chili to the "salsa criolla".
Welcome to Peru guys! When ever you get the chance, got to the south, Arequipa has (in my opinion) the best food in the whole country. The diversity is incredible. Also the city is a lot safer than lima and it is beautiful. Thank you for showing Peru to more people and keep enjoying your time in Peru!
The best anticuchería is in La Norteña in Pueblo Libre and they also have the best picarones. The ones in Miraflores are expensive, never had them, but too expensive and I doubt they are that great. Also La Lucha is mostly bread, there are much better places where to have a butifarra. Hope you come back in the future during summer time! You gotta try the cremoladas Yayo´s in Breña and the best churros in Downtown lima, churros españoles La virgen del Carmen.
Not so many locals in AL TOKE PEZ, because we are usually running, we can not wait those lines, besides that, there are many places around there without long lines, prices are a little beat cheaper and the amount of food is bigger... but AL TOQUE PEZ is awesome if you r not in a hurry...

Greetings. You went to places recommended by Netflix, that is, by tourists, most of them are located in exclusive places in Lima, where most of the true Lima residents do not live, Americanized areas. The real places where they prepare a thousand times better than those promoted places, are outside the tourist districts that travel agencies advertise (districts of San Isidro, Miraflores, Barranco). They are places in Lima where most Peruvians eat: restaurants, Huariques, chifas, etc. Lima has more than 40 districts to visit. The specialists in PAN CON CHICHARRON prepare it in "EL CHINITO", instead LA LUCHA was created in exclusive places to try to imitate that of CHINITO, that's why they became famous; but it is recognized that they have a greater variety of breads with other meats.
