    I love the mom and daughter story because I’m just exactly the same 😆 I dont like eggplant and my mom in the meanwhile … but I’ll try your way because I’ve heard from many people that it tastes like a vegan chicken when we grill it this way. Thank you for the video! 🥰

    This is also good with a squeeze of fresh lemon. Eggplant parmigiana (parmigiana di melanzane) is also amazing!

    Can I cook it at lower temperatures? I usually smoke my meats around 250-275 for a few hours and am wondering if I can cook these alongside the meat. Thanks

      Yes! They don't turn out exactly the same but still super delicious! 450F for 15 mins per side. Total about 30 mins.

    Thanks so much for the recipe. However, I salted my brinjal beforehand, and actually washed the salt off, instead of just wiping it off. I'm not a lover of salt, and don't even cook with salt. I prefer to use soya sauce, or pink Himalayan salt, if I have to. I grilled my brinjals after washing and wiping dry, but they were so hectically salty. I can't actually eat them - so disappointed 😩 Next time, I'll just add a tiny amount of pink salt, wash it off, and then grill. I also char grilled them, and they came out kinda bitter. Clearly I'm doing something wrong 😭

      Did you use coarse salt? If you "washed" the salt off with water you probably dissolved the salt and the eggplant absorbed it. That's why I suggest using a paper towel to remove the salt crystals. The point of this is to also absorb the bitter water that's pulled out of the eggplant by the salt crystals.
