But sticking to your guns here can be difficult. But we must at all cost.

I worked at a marine/auto upholstery place about 5 years ago. At that time, our rate was $75 for labor. We did a lot of marine covers, seats, etc. No one ever quibbled about the price because 1) we did excellent work and 2) we were among the few people in the area that did that sort of work. If people didn't like the price, they could go elsewhere

That's certainly the niche of exclusivity... i.e. instant sweet spot. Be sure to leave your signature or initials in a prime location on your cover. I can't wait to watch you achieve greater than you could imagine.

You can't please everyone with pricing. If you price it too low, they think you do ok, or shoddy work. If too high, then those who don't know quality will not understand. You're doing the right thing.
To address the “lack of experience” implied comment, what you might do for future customer meetings is make up a 4x2 feet scaled sample so people can see the quality of materials and workmanship you would supply.
Tailoring is having alot of rebirth going on now. But many need to come up with ways to stay profitable. And really thats starting training programs with high schoolers, getting elderly involved. Making up money on volume so instead of $20 for a shirt make a minimum rule so $25 for two shirts.
