we have been trying to get the center screw off for several days, I think the previous owner had it screw in too tight, tried WD-40, the center screw just wouldn't nudge .... any good suggestions?

Do the shafts that the gears go on need cleaning and grease or oil?
Redo this video using a tired old used winch so we can see what a dirty one looks like.
What about gloves when handling chemicals?
