I've never made a paella before. Got the 12 inch pan and the rice linked on this page. ( Hope it helps supporting you. ) A long time ago I bought a ceramic garlic baker from Sassafras and used it to make the head of garlic in it. Otherwise I followed the recipe, which was very clearly demonstrated in the video and documented in your linked recipe. The timings were near perfect for my high altitude and needed only very minor adjustments. The dish came out exactly as shown in your video and it was just excellent for our taste. Five stars.... again. Thanks much for posting. My next project is your Spanish Corn & Potato Soup. Already have all the ingredients for it...
Good job and I'm right there with you on the quality saffron!! People keep whining about the cost bla, bla, but you're talking about a couple of euros here ... but one thing that is important is that NOT all round rice is the same. "Paella rice" (Bomba, Calasparra, Valencia) have a low content of starch and absorb lots (about x2,2) of liquid! That's what gives you the loose texture. If you use round rice that is e.g. used for rice pudding, then you'll end up with a clumpy mess.
I'm addicted to paella now since learned up from you. All these while cook with arborio rice & finally I know where could get Bomba round rice. Going to cook with round rice soon.
Proof that you don't need a huge designer kitchen that cost a fortune to make amazing food - some of the best cooks I've come across had tiny unpretentious kitchens and just basic utensils
Hey Albert....National Paella Day here in the US is fast approaching! May 27th, also better known as Memorial Day. Excellent and timely recipe you posted. Gonna make our annual celebratory paella as usual, but definitely not vegan as Mrs Rivet and I are omnivores and will happily demolish sea and land based animal flesh. Gotta have shrimp and mussels in our paellas :) Love your take on it though. Excellent recipe as usual coming from your kitchen! Never thought of adding shroomers to it, may just do it this year. looks great. It would be helpful if you could give some guidance on the texture, moisture level and taste. is the rice supposed to be cooked like rice as a side dish, or should it be a bit less soft? Is it supposed to be juicy or completely dry? should there still be vegetable broth or should all have been evaporated or soaked up by the veggies? thanks
Made it last night, very easy to make. Sorry no paella pan yet and saffron didn't come yet and unavailable in local stores. Also replaced veg stock with chicken stock with less salt because I added 2 tablespoon on capers. Why taste way better. Made about 8 main course servings.

So you don't wash the rice or cook it covered? I've seen a lot of your videos and I don't ever see you do either. I find that interesting since I was always taught to wash rice and that you can't soften rice if you don't cover it. Would love to hear your thoughts Thx!
