But cotm one is a good contender with DoI:DoS edition for the first place. But if what your referring to is best "Dracula theme" and not best "Dance of Illusion", it's definitely proof of blood.
The 64 version is my favorite with its gothic aesthetic tone. That game captured Castlevania so well with the haunted forest, haunted house, and Dracula’s massive castle that blends science and magic. The whole game felt like a mix between Tim Burton and Stephen King.
It's really not given the credit it deserves honestly and would be a killer remake today. The atmosphere was off the charts! From how dark it would get when attacked by hell hounds to the lady vamp watering the flowers with blood. The music fit every stage perfectly as well! This was one of my favorite 64 games as a teen!
Judgment's official soundtrack release dropped (?) a lot of the flourishes that made the in-game version so grand. The choir and extra instrumentation lent it a sense of... finality, that would have made it a perfect fit for a hypothetical 1999 game. My personal vote still goes to the rendition from The Arcade as the best, even if the choir is mostly saying "He has a penis!"
I just realized something... this theme also sounds like it has lament and sorrow within it. Like the song is attached to a person who is lashing out at the world in their grief. Probably has a lot to do with Dracula having lost Lisa because of the lynch mob having killed her because they thought she was a witch.
Soma loses it and embraces darkness if he thinks Mina was killed for long enough, which is a consistent theme that Dracula is driven by his passion for his loved ones and rage when he can't save them.

I think Judgement's has to be my favorite of the more modern tracks, whereas Legacy of Darkness' is my favorite of the older tracks. PCE one is "lacking range" somewhat---the organ and drums are clear, just not enough strength due to limitations of the PC Enigne sound chip? It just feels too dulled/quiet. The SNES one is flawed, even with a more powerful Sound Chip it is limited by the samples from the cartridge and comes off dirty synth. (2nd/3rd to Dance of Illusions, SotN in some order) Dawn of Sorrow is the best mix of both Rondo of Blood and Dracula X. They learned how to maximize the sound processing in the DS system. Circle of the Moon's version is too fast paced sounding and due to the limits of the GBA's sound chip just doesn't hit right either (it feels like some Old Western adventure carriage chase instead of a Boss Battle in a Castle). Also, the reason SotN version doesn't seem to hit right, I can only attribute to limited recording of the instruments used at the time. 🤷♂ The Arcade version is the final mix of all of the other's strengths in tempo, additions, and sounds more robust overall.
