I'm of french/german descent so none of this was familiar to me before you came along... I even make my own yogurt... I beleive you use citric acid atleast two of your other recipies. I first heard about citric acid through your recipes. It was probably in one of the marinades of the meats and other chinese style reciples.

So I tried the kadhi today. I had to improvise a little because I never have all the ingredients so I had to substitute besin with corn starch, dried red chillies with fresh green ones and coconut sugar with regular one, but either way it was an explosion of taste. Glad that I made it, I needed something very quick and nutrient. Thank you, I will definetely cook it more often.

I use oats & green moong daal since my husband is diabetic & in the end I give a bagar to the khichri it's delicious 😋
