    If you are planing to bake these then preheat oven at 325 degrees F
    Ing:
    2 cup oil for frying
    3 cups white flour
    1 egg
    3/4 cup sugar or 7 tbsp
    5 tbsp oil
    1 tbsp instant yeast
    1/2 tsp cardamom powder (optional)
    1 cup warm warm
    5 tbsp warm water if needed extra
    pinch of salt
    extra flour for dusting
    Method:
    In a measuring cup add your warm water, yeast and 2 tbsp from the 3/4 cup of sugar and mix well keep aside until it has bubbles in it and has started rising, once it has a lot of bubbles you have activated the yeast and now keep it aside, let's start with the other ingredients.
    In a big bowl add the white flour, egg, oil, salt, cardamon powder and the sugar, mix all this really well before you add the yeast mixture in there. Once the yeast has stated frothing up add it to the flour mixture and start binding the dough, to achieve the results of soft mahamrys you might need to add extra water in order to have a dough that is not super sticky but is not dry either. If you feel like you need to add more water just add 1 tbsp at a time and knead the dough until it is not too sticky and not to dry and hard, it should be a nice soft dough. Let the dough proof in a warm place until it is doubled in size. Once the dough had doubled in size make 4 sections and follow the instructions in the video on rolling the dough's thickness if you want them hollow or cakey. Take each section and roll out in a circle and make another 4 sections, do this to all, cut out parchment paper and individually place the mahamri on the parchment paper sprinkled with just a little bit of flour. If you are making the hollow mahamry then no need to proof, but if you want the cakey mahamry then proof until you see it has doubled in size. Heat up the oil and test the temperature by adding bit of the dough in there and fry the mahamrys according to the video tutorial shown above. If you are planning to bake them then bake them for about 15 to 18 minutes depending on how dark you want them.

      Thank you so much for the kind words, first make sure and proof your yeast as mentioned in the video, next once your yeast is proofed it will give it a jump start for rising the dough, cover the bowl really well and put it in a warm place like the oven (oven should be off) unless you have a proof option for the oven, or put it in the microwave, I sometimes put it near my heating vent.     In Lamu we use coconut milk for mahamri and sometimes no egg

    I like your recepies.
    When I make the smaller mandazi, they come out well.
    But when I made the bigger mahamri, they soaked in oil.
    What could be the problem?

      Yes it’s perfectly fine to use cardamom powder and my daughter rested about 45 minutes because it was really warm in the kitchen so it will really depend on the warmth in the house

      Binding the dough 10 min
      Leaving for it to rise depends on the temperature so I can’t really tell you
      Rolling out 5 min
      Frying 10 min so it can all be done it a good two to three house again that would depend on the rising time

    In East Africa our mothers used to make something similar to mahamri, I think called tepla, which is brownish and does not rise/puff like mahamri. We you used to eat this with rice pudding. Any idea of this recipe? Thank you and best regards

    Asalamu alaikum sister! I need help. I followed your recipe but when I add the yeast mixture in the flour, my dough becomes too sticky. What am I doing wrong?

      Add the mixture slowly this means there is more liquid and less flour, add a little mixture and bind then a little more and bind until you have a non sticky dough

      I have never made it using alternative sugar I would first see if the mixture of water, yeast and alternate sugar rises, if it does then you can add it to the flour mixture

    A bit confused... in US measurements 4 tablespoons is 1/4 cup... so 3/4 cup of sugar should be 12 tablespoons....

    Question, my dough came out really sticky. What’s the reason for that? Also is it okay to let it ride over night?

      All flours are different that’s why we add the liquid slowly until the dough binds to where it’s not sticky, you can let it rise overnight just make sure the temperature is not very warm otherwise you will have a yeasty smell in it

    Since you say you practice your number of times, may I ask you one more time can you please weigh your ingredients such as flour and sugar! Weight in grams is same in any part if the world but CUPS are not, we don’t get the same results as expected from your recipes! I hav asked you number of times before this, please weigh when doing your practice versions and add in the description box
