One observation i made is if you use only yeast, the mandhaazi is hollow, perfect for scooping up bharaazi with. Adding in equal parts of baking soda will give a cakey texture inside, better for dunking in chai.
So there is two types of mandazi, one if you roll them thin it will not have the dough in the center, if you roll them out a bit thick you will have a doughy middle, I hope this makes sense

Thank you so much, as far as Amina she picked the dish herself, in our culture and traditions, girls are introduced in the kitchen and house chores at a very young age, it’s just how we have grown up, my 2 year old granddaughter has already started taking a lot of interest in all the household chores and cooking
