I have been a Paula fan for many years. Lately she has been inviting her grandsons into the kitchen. That makes me love her even more. Not only is her love for Jack, John, etc. obvious - her patience and willingness to teach her boys is absolutely wonderful.
I've made something similar & it was delicious! My method with the tortillas, whether corn or flour, is always to toast them up on a comal or frying pan to brown them a bit, with a little oil or butter, so they don't turn to mush & it takes away the raw flavor & texture. In my opinion tortillas are always meant to be prepped that way rather than eaten straight outta the package.
Funny little story, at any family gathering I always make the 7 layer dip. I usually put a packet of taco seasoning in the refried beans to add flavor. One of my sons was is the kitchen with me while I was preparing this dip for our Thanksgiving snacks.... we’ll long story short, I ended up putting a packet of turkey gravy mix in the beans instead of taco seasoning. Everyone still ate the dip and my oldest son and I still laugh about that at all of our family gatherings even though it’s been 15 years since it happened. Love you, Paula and all the joy that you bring to my life and all the others too‼️❤️

The one thing I do like about Jamie's recipes, is that they are so few ingredients, and it's usually something I have around the house. I also like Bobby's recipes a lot because I like the healthy recipes.

We used to make a similar dish with 1 lb ground beef cooked, add in a can of chili beans, add 4 oz can tomato sauce and 4 oz water with a packet of your favorite taco seasoning. Layer torn (enough to cover pan) corn tortillas in a greased 9 x 13” pan top with half the beef mixture top with 1/2 cup cheese and repeat layers once more. And you can add a jar of Tostitos cheese queso sauce to the beef mixture and add other seasonings of your preference. Sooo good bake 325 to 350 degrees 25 to 35 minutes, or till heated through
In the mid 80’s my mom’s special dish was taco pie. This was baked in a pie plate and the crust was crescent rolls pressed in the dish to look like a pie crust. Then topped with a layer of crushed tortilla chips (or Doritos) and then add the cooked and drained meat mixture of ground beef with taco season packet and sliced black olives with canned and drained diced green chilies (now we use rotel, drained). Next is a heavy layer of sour cream. Next layer is a lot of cheddar cheese ( freshly grated from the block). And topped with crushed tortilla chips (or Doritos). We usually make two pies. Bake both at 375 for 20 mins. Topped with finely sliced green onions and diced tomatoes. This was always a special treat as a kid. Two pies lasted several days and we ate it with a side of refried beans and Spanish rice.

Plus you can cut leftovers in squares and freeze the squares until ready to eat another day...They thaw easy and taste just as good as the day you make it! I call it "Taco Bake" and here it is... for anyone interested: (Would Love to see Paula try it!) This will take it to a Whole "Nother" Level... - Brown 2 Lbs. Ground Chuck Beef with chopped sweet onions, S & P to taste, (Tajin Lime Mexican Seasoning is really, REALLY (reiterated) good to add as well, I use it on a lot of things, even roasted chicken and vegies). Drain, then put back in skillet and add taco seasoning and 1 can of Rotel diced tomatoes and set aside. - Heat (on Med temp.) 2 large cans of Black Beans (Drained, but reserve 1/2 cup of liquid on side) in saucepan with 2+Tbsp. of Unsalted Butter (this gives the beans a very yummy unique flavor) Tajin seasoning and add 3-6 Tbsp. of reserved liquid. Once heated, smash beans and add more liquid by the spoonful, if needed. Once it is a thick; but smooth like butter consistency, turn off heat and set aside. - In a separate bowl mix 1-2 large can Red Refried Beans with 1 can Rotel diced Tomatoes, set aside. - Shredded Sharp Cheddar Cheese ( I mix sometimes White and Regular) - Large Flour Tortillas In a 13 x 9 casserole start Layers with Flour Tortillas covering the bottom, then spread with Red Beans, next add 1/2 Beef mixture and then Cheese layer...as much as you like. Next REPEAT ending with Cheese ( Flour Tortilla, Black Beans this time, other half of Meat and Cheese and then 10 min. before done, I take out and add more cheese so it is runny and smooth just like Paula described but with another layer underneath of baked cheese). - Bake uncovered at 350 for 45 min to 1 hour. You will know its ready when bubbly and Cheese is Golden. (Remember to take out and cover with another layer of cheese 10 min. before done) Once Done, take out and let cool for 20 min. - Top like a Taco with all your favorite toppings and REMEMBER you can FREEZE the leftovers for a rainy night! I sometimes just use raw onion, sour cream and Taco Bell Sauce from the bottled version at Walmart. Other times I top with the whole works even Guacamole! Hope someone will try this and I promise you wont regret it! The layer of Black beans gives it a tangy, savory, mouth watering Experience with every bite!

Mexican lasagna would be Pastel Azteca using corn tortillas. Theres also enchiladas huevonas, lazy bake enchiladas either red or green. This is more of a lazy burrito. More like chicano or texmex cooking. As long as it's delicious!! Ty Mrs. PAULA!!
Made this recipe tonight while we were camping! It was delicious and we had plenty of leftovers for tomorrow night’s meal! It was quick, easy, very tasty and oh so filling! Thanks for sharing this recipe!
As a Texan , I totally agree. Flour tortillas get soggy and doesn’t give the flavor of the corn tortillas. I would gently heat the corn tortillas, dip them in some enchilada sauce before putting them in the pan.
I see where she was a bit confused with that last layer she was trying to figure out. In his recipe she said, it says to repeat layer. There's where she needed to add another layer of the tortillas, then add in the other layers of the meat and so on. That's why it called for 8 tortillas, and she thought it wouldn't need that many.. This looked and sounded so good. I don’t have the ground beef, but I got my cans of chili with and without beans. (My lockdown pandemic can foods). I’m gonna use that with black olives and cheese. It’s not gonna be as good, but it won’t be bad either. Best of all it’s not expensive to make! I love Paula Dean. Just hearing her voice makes me smile!
I just made this and the flour tortillas give this dish so much substance! The beans add an extra layer of texture that is so, so good! I see why the kids enjoy this so much. I did add some diced tomatoes in my meat mixture. Yummy!
You might want to read the recipe first. It calls for more tortillas than she used. I make something similar and it uses a lot of tortillas, layered like lasagna. 👍
Yum!! Tip: To save walking back and forth, there are really inexpensive burners, gas or induction, that you can use right on top of the counter and stay talking to the camera and Eddie can see what you're doing in the pan. We use one for recording and love it.
The dish looks great. Love refried beans. And mine doesn't come out right homemade. Thank goodness for Old El Peso. Meat releases a lot of water upon cooking. I bet most of that wasn't fat. I usually skim the liquid after it cools and dump it back into the meat.

You should of folded those side tortillas over and put a cast iron skillet over and then baked! It would given you a nice golden sealed envelopment all around . and then take it out after baking and flip it and cheese it and throw it back into the oven without the weight of the skillet until hot and melty. Just sayin' lol

that's because she didn't make it correctly, should have been a couple more tortillas between layers to give it structure. Would have fallen apart if cut like pie.

Yum! Paula, I have a family member who makes a ground beef lasagna but without pasta sauce and using shredded American cheese. She layers the ground beef then lasagna noodles then American just like a regular lasagna and it’s so good. I guess it’s sort of like a cheeseburger lasagna! The one you made is a great idea if you like Mexican food 👍 Looks delish!

Talk about a good warm dish for a cold winter day. Yes we love Mexican food, or Tex-Mex as it's referred to down in Texas. The cheesier the better! And guacamole too. Nice job with Jamie's recipe. I think I would prefer it with corn tortillas, especially layering them like that. But we all have our own preference. Of course I just finished my coffee (as I do every morning when I come here) and was thinking about something for breakfast. Hmm 🤔, maybe huevos rancheros or migas. Have a great day!

Paula- I got the cheese grater off Amazon that you just turn a few times and an entire block of cheese is shredded (slicing attachment is in it as well)- tastes so much better than store bought shredded cheese - melts better! Makes it SO EASY & all dishwasher safe! I’ll never buy already shredded cheese again.

They pump up the meat with water, so if you put that rendered "grease" in the fridge and let it chill you can see how much is really grease and how much is just water because the grease will solidify on top.
I do notice that most Mexicans do buy the corn variety and look at me like I'm a hopeless fool when I buy the four kind. But the flour tortilla is so good. I had them once in Mexico made with lard. So good. Brought several packages home.
@Love & Best Dishes, There isn’t any garlic or onions? I put onions in my ground beef while cooking PLUS garlic & onion powder as well. I’ve made it where I added some salsa to the beef (after it was cooked & drained) If I didn’t have any tortillas on hand I'd use regular lasagna noodles with all the same ingredients & toppings.Once I threw in a can of corn or use some green chiles in the small can. You could use the Mexican 3 cheese blend which is what we do often, OR you can mix & match your cheeses or even a pepper jack & a Monterey Jack & even mix the tortillas. We have shredded lettuce, extra salsa, sour cream , jalapeños & a Mexican crumbly cheese to add afterwards. This is a fun recipe to play around with. Either way~ YUMMINESS That’s the fun part of this recipe and others, you can make it many different ways & have fun with it depending on what you have on hand. Plus it’s quick & easy. I’ve been making different versions of this recipe for almost 25 years. 🔹I don’t think Miss Paula cut into it because she was saving it for their supper. Lol. I love that you cook this and show us all the steps. I have been able to cook and the food tastes good. At 60 that is pretty much a first.

I make something very similar, except you flatten out a pack of crescent rolls and put everything inside, wrap it up and bake it. Delish!

I just made this and the flour tortillas give this dish so much substance! The beans add an extra layer of texture that is so, so good! I see why the kids enjoy this so much. I did add some diced tomatoes in my meat mixture. Yummy!

You might want to read the recipe first. It calls for more tortillas than she used. I make something similar and it uses a lot of tortillas, layered like lasagna. 👍

Yum!! Tip: To save walking back and forth, there are really inexpensive burners, gas or induction, that you can use right on top of the counter and stay talking to the camera and Eddie can see what you're doing in the pan. We use one for recording and love it.

Meat releases a lot of water upon cooking. I bet most of that wasn't fat. I usually skim the liquid after it cools and dump it back into the meat.

You should of folded those side tortillas over and put a cast iron skillet over and then baked! It would given you a nice golden sealed envelopment all around . and then take it out after baking and flip it and cheese it and throw it back into the oven without the weight of the skillet until hot and melty. Just sayin' lol
that looks so good. i would add paprika,garlic&onion powder to the beef and crisp that cheese on top. yummy!

Yum! Paula, I have a family member who makes a ground beef lasagna but without pasta sauce and using shredded American cheese. She layers the ground beef then lasagna noodles then American just like a regular lasagna and it’s so good. I guess it’s sort of like a cheeseburger lasagna! The one you made is a great idea if you like Mexican food 👍 Looks delish!

Talk about a good warm dish for a cold winter day. Yes we love Mexican food, or Tex-Mex as it's referred to down in Texas. The cheesier the better! And guacamole too.
Nice job with Jamie's recipe. I think I would prefer it with corn tortillas, especially layering them like that. But we all have our own preference.

Paula- I got the cheese grater off Amazon that you just turn a few times and an entire block of cheese is shredded (slicing attachment is in it as well)- tastes so much better than store bought shredded cheese - melts better! Makes it SO EASY & all dishwasher safe! I’ll never buy already shredded cheese again.

I love this idea, Mexican food is one of my favorite.
They pump up the meat with water, so if you put that rendered "grease" in the fridge and let it chill you can see how much is really grease and how much is just water because the grease will solidify on top.
Corn tortillas would be better-the tortillas won’t become gummy like the flour kind. ❤️

I do notice that most Mexicans do buy the corn variety and look at me like I'm a hopeless fool when I buy the four kind.
But the flour tortilla is so good. I had them once in Mexico made with lard. So good. Brought several packages home.

There isn’t any garlic or onions? I put onions in my ground beef while cooking PLUS garlic & onion powder as well. I’ve made it where I added some salsa to the beef (after it was cooked & drained) If I didn’t have any tortillas on hand I'd use regular lasagna noodles with all the same ingredients & toppings.Once I threw in a can of corn or use some green chiles in the small can. You could use the Mexican 3 cheese blend which is what we do often, OR you can mix & match your cheeses or even a pepper jack & a Monterey Jack & even mix the tortillas. We have shredded lettuce, extra salsa, sour cream , jalapeños & a Mexican crumbly cheese to add afterwards. This is a fun recipe to play around with. Either way~ YUMMINESS
That’s the fun part of this recipe and others, you can make it many different ways & have fun with it depending on what you have on hand. Plus it’s quick & easy. I’ve been making different versions of this recipe for almost 25 years.
🔹I don’t think Miss Paula cut into it because she was saving it for their supper. Lol. I do the same to my cheeses in this recipe, I wait till the last few minutes to get it melted GOOEY & OOEY goodness on top.
