I totally agree w/Belinda Jorgensen. Plus you never know how an unhealthy lifestyle/diet will effect you, what illness will result , when or how severe it will be? The long term cost in quality and even quantity of life is at risk. If you live in American, factor in the medical/insurance expenses. You can't afford not to eat healthy. Let me not speak for you. I can't!

How fresh does the almond milk have to be? Since homemade almond milk has a shorter life span, I'm wondering if I can still use the almond milk once I start noticing it JUST starting to get sour.

Hi Vanny - you can find the storing instructions on my blog (in the recipe box): “Leftover almond milk yogurt keeps well covered in the refrigerator for up to 1 week.” I have to admit that I have certainly had the yogurt in the fridge for even 3 weeks and it was still good. You just have to be careful that you don’t introduce any bad bacteria into the yogurt while making it. You could use xantham gum or corn starch as thickeners, but they are not equivalent to agar. Personally, I don’t use either xantham gum or corn starch, so unfortunately I can’t give you the amounts you should use.

That's a really good question. Personally, I haven't had luck with it. I have tried regular (dairy) yogurt in the past and it worked just fine. For some reason, almond milk yogurt (as a starter) doesn't work (or at least it hasn't worked for me yet).

I read about it and it seems to be some kind of starch. Do you think another kind of starch like cassava flour could work? Or perhaps you know of some substitute for kudzu root? Hi Alessandra - no need to apologize :) While I haven't tried it. I think that arrowroot flour would work just as well as a substitute for kuzu. Is that a more common ingredient where you live?

If you ferment longer, like 24-48 hours, it will thicken on its on. No agar and the other thing needed.
