    Dave... Mom was a gourmet cook and owned alot of Porcelain on iron/steel cookware. Suggestion... Invest in a nice set of wooden spatulas, scrapers, pasta fork, spoons and in quantity, so you can have free reign to dedicate a utensil to each one of your skillets, pots, pans, etc. Cook~on my friend!🤗👍🐿

    The first step to being a better cook is using what the French call "mise en place" or everything put in it's place. Makes cooking so much more relaxing. I line my "mise" up in the order it is used in the recipe. Makes everything much simpler. Really like your series because it makes cooking so much more approachable for people who don't really cook.

    I always cut ALL proteins on a cutting board that can go in the dishwasher. Otherwise juice from the protein, especially chicken, will very in the groove made by the knife cuts.
    I'm from Texas & love chicken & dumplings. I use a lot of baby carrots.
    Actually chefs do measure out & prepare their ingredients before they begin, its called mise en place which means something to the effect of "everything in place" so it's great that you do that.
    It's good your C&D came to a boil not just a simmer. Anytime you use roux or corn starch, it doesn't fully thicken until it comes to a boil. I've never put peas in mine, but I think I will next time. You may know all this cuz in watching you, I'm betting you know a lot more about cooking than you let on, but you're fun to watch. 😉

    Dave, you can use stewing chicken cook it down in a pot of water, or use broth, when its done take bone out of it!

    Dave you are great! Normally I buy dumplings frozen or use can dough. I primarily watch your flipper channel and TTC but this is becoming a favorite. 1 tip, when stirring use wooden spoon or spatula to get the "fond" off bottom so it doesn't stick and burn. Italian parsley is my favorite as it has more flavor, so great accident...

    Italian parsley, for cooking and sprinkling on top of finished recipe, flavorful!!! Curley parsley decorate platters of appetizers, sliced roasts, chicken etc. love watching you create!!!

    It looked good to me….but yes the dumplings could be a tad smaller. I love how you just throw caution to the wind and cook away…I’ll keep watching!!!!

    I was totally entertained tho. If I could choose one suggestion from the hundreds that I have, I would recommend that you watch at least 5 other C &D recipe videos by other people who know how to cook.... I give you an A for effort and truly admire your courage in actually eating the finished product! Again, I loved the video and with your determination and willingness to jump in there and just start cooking without any culinary experience is a testament to your perseverance! You're gonna make an excellent "cook" one day! Keep these videos coming! I liked and subscribed!

    Acre Homestead is great. Homesteading doesnt mean you have to give up modern amenities. It means you are more self reliant with your food and resources.

    Ditch the fork and use a flipper or flat edged big spoon. You need to be able to scrape the bottom so it doesn't burn. Even a wood spoon would be good and not scratch your pan. Love the video. I hate making the roux

    Dave, a roux always gets cooked on low. (I’m from Michigan, married a guy from Louisiana, and had to learn how to cook Cajun/Southern)
    Using a spatula or wooden cooking spoon would have made it easier to stir the roux. That gives you a chance to scrape the bottom of the pan. That will prevent burning.
    I just LOVE your cooking shows!!

      I had a fusion of Cajun and Sichuan styles of cooking... Most Sichuan dishes never had roux in them...and that was one thing I added in one form or thr other...

    Also i suggest you get the TFal diamond finish pan, Best pan i've ever owned and not too pricey either, i've went through so many pans and this was finally The ONE!

    Acre homestead is a great channel. Becky lives in a big house with amenities . She has chickens for eggs and began a garden maybe 3 yrs ago and is enlarging the process as time goes and documenting and sharing her progress.. Homesteading is word with broad meaning.

    Italian parsley is the parsley with most flavor. Curly parsley has very lil flavor but really used for decorating. Don’t use Curley parsley if you want real parsley flavor. It’s just pretty 😍

    I cut chicken on my wooden board all the time for years .. I rinse my board off and then I clean it with vinegar and salt let stand for 5 min and rinse and dry .. store .. I am still alive because I am tying this suggestion lol .. lv u vds . No question is a dumb question.. only dumb people never ask their for never learn high Tina ❤️❤️❤️❤️

    Interesting...Chicken n dumplings is one of my favorites. That recipe is different than traditional chicken n dumplings. I actually cook mine in the crockpot for the ease of it. The chicken should be very soft/tender. Usually without peas/carrots and a thicker sauce. That recipe looks more like soup. I'm sure it tasted good but not what I have ever eaten at a restaurant or what I cook for chicken n dumplings. I always order it at the Apple Barn & the Mill restaurants when we are in TN.

    In days of old wooden cutting boards were the norm. The wood grain wood absorbs the raw chicken juice that could bring with it salmonella poisons inherent in chicken products not properly refrigerated to halt spoilage. Modern plastics have mostly taken care of the food poisoning problem as long as you wash everything in contact with the chicken. They don't call it foul for nothing.

    Overcrowding any meat will steam it instead of browning. 3 T of baking powder will make large dumplings indeed.

    Do a video on fried pickles. I attempted it about 3 days ago. Afterwards, my wife said that I was banned from the kitchen. That’s how bad they came out and I smoked out the entire house 😅

    Every time I see someone or if I eat something to hot I think of the sitcom Reba. Where the son-in-law Van takes a bite of hot food and does the mouth hot food dance. you have to look up the scene online and watch it. It is so funny.

    Hay Dave, when you're chopped veggies are large and/or inconsistently chopped, just call it 'rustic'. That way it makes it seem like you meant for it to be that way. Nobody has to know.

    If you are clean don't fret about boards. The concern is that the chicken doesnt' get cleaned up well enough and cross contaminate.
    The blood was a vein that didn't get pulled out, yes real blood.
    And too funny, yes they grow.

    I keep wondering whether you’re kidding us or not. The best most experienced cooks/chefs always collect and measure out all the ingredients first. It’s called “mis en place”. French for “put in place”. I guarantee you’re not the only one to do this.

    Let food rest for 10 minutes after you take it off stove so you can actually eat it!! LOL!!The sauce will thicken up a bit as it cools….you want that.

    Dude.....a quart of chicken broth is 4 cups.....why use the measuring cup for that? It works better if you use a wooden spatula for scraping the bottom of that enamel pan. That fork doesn't get the fond off the bottom and it burns and the fork will eventually scratch that beautiful pan. "Carry on "

      Carrot peels do NOT have a pleasant taste soooooo, Peel your carrots and cut them into consistent uniformed bite sizes. Don't mince them.

    Just use the other 3/10ths pound of chicken! What are you going to do with that small piece of chicken breast? Stop scraping the cutting board with the cutting edge of your knife. Turn it over and use the spine. BTW, did you wash or peel the carrot before you chopped it up? Just because it came in a bag from the store, doesn’t make it clean.
    Try making chicken and slippery dumplings like they do on Maryland’s Easter Shore and Delaware. I like it much better than the southern style.

    Of course they got big. What you did was to make biscuit dough and cook them in liquid instead of baking in the oven. Don’t you expect biscuits to “grow” when baking? Plus I guarantee that it’s not the worlds best chicken and dumplings. Computers aren’t good at everything.
