- If you love scones and are looking for the absolute easiest way to make raspberry scones, then you've come to the right place. This recipe is so easy and delicious, and you can even substitute the raspberries for whatever fruit you happen to have (fresh or frozen). Recipe below:
Raspberry Scones
2 1/2 cups all purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup sugar
2/3 cup butter, chilled
8-10 Tbsp. milk
1 tsp. vanilla extract
1 cup fresh raspberries
coarse sugar for topping
Whisk together all dry ingredients in large bowl. Cut butter into flour mixture using pastry blender. Combine milk and vanilla in small bowl, then add to flour mixture. Stir to form dough. Add raspberries and gently knead evenly into mixture. Take half of the dough and place on well-floured surface and shape into a disk (flat round circle). Cut dough into 5 or 6 triangle wedges. Place on cookie sheet and sprinkle generously with coarse sugar. Do the same for the other half of the dough. Bake 18-20 minutes in 400º oven.
*You can substitute any kind of fruit for the raspberries.

Nice i made scones today, Yet my recipe calls 4 -1 medium egg and I struggle with it as it becomes a gooey mess. Can't wait to try yours. Also, I brush heavy cream over top , sprinkle sugar chill 1/2 hour before baking. Thanks
