I've been looking for a guide like this! After several years of video editing on this machine, I need to replace my motherboard due to a lack of M.2 slots. That's what you get for moving up to 4K Prores RAW HQ I guess... It seems so daunting to tear it down, replace the mobo and get everything back in the right place. I currently have a 500gb Samsung 970 Evo Plus (OS/programs), a 2tb Samsung Evo Plus (projects/footage), 16tb WD Ultrastar (Sata HDD, archive drive) and a 4tb Seagate Firecuda 530 (bought for 4K Prores RAW projects/footage). I also have a spare 500gb Samsung 970 Evo Plus (which could potentially be used for scratch disks). Running a Ryzen 3950X, Gigabyte x570 Elite (current mobo), Gigabyte X570s Master (new mobo, collecting dust on the shelf for a year), 4x16gb GSkill TridentZ Neo 3600 CL16, MSI 2080S Gaming X Trio, Corsair RM750x (2018) in a Fractal Meshify S2 case. It seems really complicated thinking about cloning vs wiping the drives, maybe a Windows 10 refresh and getting multiple versions of Premiere + plugins all back in place.
