Almond Joy Balls

14 ounces sweetened coconut flakes
14 ounces sweetened condensed milk
almonds
chocolate almond bark
Creamsicle Fudge

3 cups white chocolate chips
14 ounces sweetened condensed milk
4 TBS butter
orange food coloring
1 TBS orange extract

Another super easy candy is chocolate covered cranberry sauce. Use dark chocolate. Slice the cranberry sauce and lay on a parchment covered sheet pan. Freeze about 30 minutes. Dip quickly in the chocolate and return to the freezer to solidify. Keep cold until serving time.

I have seen Michael Simone make the mounds, but instead of rolling it into balls, he just pressed it into a pan and put it in the freezer. He then cut rectangles about the size of a mini bar and coated them. Might save a little mess.

Hey. Brooke, Your candy looked devine! When I was a little girl, oh about 60 or more years ago, my grandma used to make molasses candy. Had to be cheap to make, we didn't have much money. Don't remember how it was made but when ready to pull, like taffy, she'd put a drop of it on water. If it formed a little ball, it was time to pull and stretch. She also used flour on the mixture while pulling it to make it less sticky to her hands I guess. You brought back a wonderful memory dor me today. Huigs

The almond joy balls were so good! I made mine with sweetened condensed coconut milk since we have a milk allergy in the family. It was the first time everyone in the family could have them. It’s going to be a new family favorite.

I’ve made a similar recipe to the Almond Joy Balls. I made smaller balls as they are so rich. I also added chopped whole almonds to the coconut and condensed milk as we love lots of almonds in addition to the slice almonds on top. Creamsicle fudge looks great. I’ll give it a try. Back in my day, we used the candy thermometer and it seemed to take forever. Tip for the best fudge ever. Make your usual fudge recipe with chocolate chips and walnuts. When done, stir in a shredded family size Hershey candy bar. It makes a nice firm fudge. Mom always kept it in mason jars in the frig. I finally figured out she could hear us sneaking into the fudge when we opened the mason jar. I did the same thing with my kids. Debi in Vicksburg, MS. 🥰🥰
