Episode/info request: I’m reading about early immigration to America and something mentioned was that the American South, primarily settled by immigrants from the British Isles, lagged far behind in cheese and butter production per capita, despite having an abundance of cattle. My first thought was the warm humid climate doesn’t lend itself to dairy products, but is there more to this? Would appreciate any insight you can provide! Thanks
