I lean more on "beer built civilization". For most of history yeast was acquired by gathering ale barm, the foam on beer that accumulates during fermentation. Without beer, there is much less bread.

i’m a pastry chef currently in culinary school and a month ago i wrote an essay about this exact topic. bread is so ancient and is literally the reason we are alive.
Well if you wrote a paper on it in culinary school then I'm sure you know that's not exactly true. That's a very Eurocentric perspective. As stated in this video majority of the world did not rely on wheat as their primary food source. So no, bread is not the reason I am alive, nor is it part of my diet today.

However, I do think that this correlation between bread and power is either, just that, purely correlation, or, that it is just one of many things that determines which societies end up on top.

It's from Jean Jaques Rousseau's book series 'Confessions' which were written in 1765, before Marie Antionette arrived in France (she would have been nine). Rousseau wrote At length I remembered the last resort of a great princess who, when told that the peasants had no bread, replied: "Then let them eat brioches." The great princess mentioned was probably meant to be Maria Theresa, wife of Louis XIV, but is probably Rousseau's invention, it being the sort of anti-royalist sentiment of 'that's the kind of thing they say'. I couldn't help but notice Matt literally skipping South Asia and Russia. India is literally the 8th largest exporter of wheat, and north Indian Vedic civilisation came to be around the Ganges because of the wheat. Russia is the largest exporter of wheat, and bread played a key role in the Communism aspect of Russia's history. Lenin famously promised the Russians for some bread, land and peace.
This is in part because they grew a lot of potatoes to make vodka with, which is why vodka is also popular in Poland and Finland (neighboring countries which grow plenty of potatoes).

I once heard that "grass domesticated people". People shaped their entire lives to making grass, then wheat, grow and grow well. 22:35 Rice isn't made into buns or noodles (unless you're in the South Eastern Asia or Southern China). Flours were still mostly used for the buns, noodles, and wraps for dumpling. China still had the ability to grow wheat and had access to the wheats because of the silk road. That's why you see so many flour-based Chinese foods even to this day.

Persia didnt really exist come 300 BC, it was conquered by Alexander the Great in 330 BC and by 300 BC its lands would largely be apart of the diadochi successor states following Alexander's death. The Seleucid Empire was founded in 312 BC, lasted until 64 BC when it was conquered itself.

Actually, irrigation had actually been invented long before Old Kingdom Egypt. Irrigation lines were being dug as early as the 6th millennium BC, in Sumeria.
A key correction: Wheat is a modern invention (relatively speaking). The ancient Egyptians farmed kamut / khorsan to make bread and imo it tastes better than wheat. It's also healthier. Do yourself a favor and bake yourself some kamut bread at home sometime. It's really good. Also, potato was key to historic civilization in South America. Maybe it couldn't be transferred the same way as grains, but it grows just about anywhere making it easy to farm in a difficult to get to place, perfect for a civilization hidden in the mountains. In Africa, it's cassava.
Cassava is native to South America, Yams are native to Africa, Asia and South America, Taro is native to South and South East Asia but humans spread it to Polynesia and Africa thousands of years ago long long before Cassava

Something he didn’t mention is that wheat is one of the first crops to go through selective breeding because prehistoric wheat is very fragile so they were selective bred to hold up longer. This also effected their yield creating more food per wheat grain

This was a very unexpected deep dive into the history of bread, you never really think about something like bread being so impactful or influential on actual events in human history, but given how versatile bread is as a food, it does make sense. Thank you MatPat for another fantastic video.

22:35 Rice isn't made into buns or noodles (unless you're in the South Eastern Asia or Southern China). Flours were still mostly used for the buns, noodles, and wraps for dumpling. China still had the ability to grow wheat and had access to the wheats because of the silk road. That's why you see so many flour-based Chinese foods even to this day.

Persia didnt really exist come 300 BC, it was conquered by Alexander the Great in 330 BC and by 300 BC its lands would largely be apart of the diadochi successor states following Alexander's death. The Seleucid Empire was founded in 312 BC, lasted until 64 BC when it was conquered itself.
And Aeneas was a trojan who survived the trojan war, going on to found the race of Romans. I don't think he was ever considered Persian

This is probably my favorite Food Theory video ever.
A key correction: Wheat is a modern invention (relatively speaking). The ancient Egyptians farmed kamut / khorsan to make bread and imo it tastes better than wheat. It's also healthier. Do yourself a favor and bake yourself some kamut bread at home sometime. It's really good.
Also, potato was key to historic civilization in South America. Maybe it couldn't be transferred the same way as grains, but it grows just about anywhere making it easy to farm in a difficult to get to place, perfect for a civilization hidden in the mountains. In Africa, it's cassava.
Unfortunately, cassava is from South America, and couldn't be grown in Africa until the Columbian Exchange.
as a Brazilian, I can confirm that cassava is our wheat and it can be used to make gluten-free breads and many recipes that use it's starch or not

I’m learning about the Roman Empire in school and this helped clear up things while being one of the most entertaining videos I’ve ever seen
Something he didn’t mention is that wheat is one of the first crops to go through selective breeding because prehistoric wheat is very fragile so they were selective bred to hold up longer. This also effected their yield creating more food per wheat grain
You can really tell how much more interesting and unique these past few theories are! MatPat's been pulling out the big guns for his final theories, and tbh, a Bill Wurtz reference was not something I expected lol.
