It takes practice and having the right tools. The compressor pressure can also affect your outcome. I use gouache paint and it’s very forgiving. If you make a mistake you can wash it off. Ive also used flow aid from liquitex to dilute paints. I’ve use Vallejo model paints but I prefer gouache. I’m convinced with time my airbrush skills will improve.

Do you have a Dremel type tool? Makes working with Epoxy a lot easy. Plus not all Epoxy is the same quality, some are much harder to shape after curing than others. You're doing a great job, airbrushing is hard for everyone, it takes a lot of practice. But you're right, getting the right materials and tools is absolutely key.
I have my first Blythe to repair, Mademoiselle Rosebud, from waaaaay back when I first started collecting in 2004. She has a noticeable nick on her left temple when we were still having to slice scalps off with a scalpel, plus needs a new scalp to reroot. I'm going to use Epoxy to fill the gap and give her whole head a respray, make her a display only doll. My Lounging Lovely is my day to day model, she needs a new face-up but she looks great still!
What doll are you using? Her back looks like a kenner blythe back.
Not a Kenner...she's an Ashton Drake doll...can't remember the name right now. ;)
