Appalachian potato soup is so meaningful to me. I found my family heritage through the Irish Appalachian recipes my grandma made growing up. You just cant buy memories like potato soup and cornbread on a cold winters night.
It's so odd to me, lol. My grandmother passed away when I was very young. But one of the memories I have of her is breaking pieces of biscuits into potato soup. But I could never get it quite right as an adult. I saw the first video of this and literally started to cry. Because it was the soup I remembered. I've been making it ever since, lol. It may be the most frugal thing I make, but I love it!
If you have an egg and some flour, mix it together until it’s pinchable and add to the tater soup and let it cook. They’re rivels and it sure does goes far to make potato soup stick to your ribs. We add onion and celery too.

We do brown gravy with burger patties & white rice. We cut up the burger patties, add it on top of the rice & smother it in brown gravy. Add some salt & pepper and if you want seasoning go for it. Super cheap, easy and filling!
@debgersh5555 my dad use to add the onion inside the burger patties but since my kiddos and husband aren't huge onion fans we skip that. But it's really good with onion too!

I even made it for Christmas because it just seemed simpler for me. Also, I've found that subbing in drained canned chicken works well for a more shelf-stable option if you don't have a rotisserie chicken on hand. I've even subbed in Jiffy cornbread thinned out a bit (water or milk) for the RL biscuit mix if needed. There's more than one way to do these things, and they still come out good! We use canned chicken in our pot pies often. We save the liquid from from the canned chicken and use it in the places of the recipe calling for water/other liquids in the pie filling for extra chicken flavor.

My favorite potato soup was our struggle meal growing up. Much like yours, boil potatoes and onions, when soft add milk, butter, salt & pepper. Done. We didn't "thicken" it. PS: he has trouble now with onion, so I grate it on the grater or microplane. So quick and easy. Happy New Year! 🥳🎉
I bought the ground turkey you buy from Walmart. Does your Walmart carry that brand of ground turkey with taco seasoning or in the breakfast sausage or the Italian sausage flavors? I bought them all, but I tell you the taco seasoning one is the absolute best. You don’t need to add anything to it. I brown it up and eat it on a bed of lettuce and it’s the best taco salad. And so cheap. I imagine that the Italian and breakfast sausages will be just as good.
I’m new to your channel but learning a lot. Thank you for easy meals you can make on a tight budget. I have to adapt to gluten free. The chicken casserole looks really good and easy to make. Could I substitute the cornbread stuffing for herb gluten free stuffing? They don’t make gluten free cornbread stuffing.

So glad you did this! I just had Cheap Chicken Casserole today but made with Stove Top Stuffing, what I had. Love this stuff! Ground Turkey isn't a favorite but I will try it in Poor Mans Steak.
You could add all sorts of things to that chicken casserole to make it "extra" like adding corn or peppers or flavoring the chicken with southwestern flavor and putting sour cream and salsa on it......oh I am soooooooo saving this video! I love all these ideas.
Love the idea of making the chicken casserole a southwestern flavor. I wouldn't have thought to do that because my kids won't do cornbread stuffing; my stuffing has to be the chicken/poultry flavor.

I’ve been cooking over 30 years and never thought of using flour as a binder. 😂😂Made meatloaf tonight and used some breadcrumbs that were getting close to expired but flour is so smart. Imma try that tater soup.
My mother in law made something she called Tater Dumplings. It was basically potatoe soup with the biscuit dumplings torn up into it. Very filling and inexpensive. She served it with cornbread.
My mom puts egg noodles in her potato soup to make it extra filling. She starts it with a mirepoix (celery, carrot, onion) and only adds salt and butter. I've always been amazed at how creamy, rich and flavorful those simple ingredients are. Yes, she also adds evaporated milk. It's only a few dollars for an entire potful that gives many leftovers.
I love the poor man steaks. I usually use saltine cracker crumbs, egg, parsley flakes, salt and pepper. I cook my patties in a skillet. I smear the mushroom soup on top without diluting with water or milk. Put a lid on it and the mushroom soup makes gravy.
We do the chicken dumplings but add in a small can of chicken or chicken left overs to add more flavor. We like to freeze diced chicken in small pucks of about 1/4 cup. This allows us to throw in a small amount of meat in any dish that needs it.

I make drop dumplings my grandma taught me, with eggs, salt, pepper, a little milk, and flour enough to make drop dumplings. This one is another “no real recipe” recipe. My family’s favorite! These also are the same dumplings for chicken and dumplings.
