- We're obsessed with Tres Leches Cake! It's so easy to make, and so delicious to eat! Check out Sally's latest spin on it courtesy of this amazing Chocolate Tres Leches recipe - a light fluffy cocoa sponge, soaked and steeped in an awesome 3-up chocolate milk (it's totally fine to sneak a small cup of this while baking - trust us), decorated with a simple chocolate icing and sprinkles!

3 Eggs - Separated
120g Caster Sugar SPLIT BETWEEN 90g and 30g
70g Plain Flour (All Purpose)
15g Cocoa Powder
1 tsp Baking Powder
1/2 tsp Salt
2 tbsp Whole Milk
1/2 tsp Vanilla Extract - get yours here: cupcakejemma.c...
2 tbsp Whole Milk
2 tbsp Cocoa Powder
1 x 400g Tin Condensed Milk
1 x 170g Tin Evaporated Milk
1 tbsp Cocoa Powder
2 tbsp Icing Sugar
200ml Double Cream
For a larger size:

225g Tin Evaporated Milk

Cake:
3 egg yolks
3 egg whites + 30g sugar
90g sugar
70g flour
15g cocoa powder
1 tsp baking powder
1/2 tsp salt
2 tbsp whole milk
1/2 vanilla
2 tbsp whole milk
2 tbsp cocoa powder
400g condensed milk
170g evaporated milk
Topping:
1 tbsp cocoa powder
2 tbsp icing sugar
200ml double cream
Preheat the oven to 160C. (The whole oven should be warm, use a thermometer.) Separate 3 eggs. Using a hand mixer, beat the egg yolks and 90g of the sugar in a bowl until pale and thickened. Add the flour, cocoa powder, baking powder salt to the egg yolk mixture and stir. It will be very stiff. Add in 2 tbsp whole milk and stir until combined. Set aside.
In the bowl of a stand mixer, add the egg whites and whip on a low speed until large bubbles form. Turn the speed up to medium high and whip until soft peaks. Gradually add in 30g of sugar with the mixer still on. Keep whisking until stiff peaks are achieved.
Stir a small amount of the whipped egg whites into the egg yolk mixture to loosen. Add half of the egg whites in next, carefully folding to incorporate. Add the rest of the egg whites in and gently fold until fully combined.
Prepare a tin by wiping butter only on the base of the tin (to prevent the cake from pulling away from the sides). Transfer the batter to the tin carefully and spread evenly with a palette knife if necessary. Transfer to the oven for 20 minutes. Turn the oven off but leave the cake inside for another 10 minutes. Open the oven door and let the cake rest inside for a final 10 minutes.
Combine 2 tbsp of milk and 2 tbsp of cocoa powder. Add in the evaporated milk and condensed milk and mix. Using a fork, poke holes into the cake. Pour as much of the milk mixture as possible onto the cake. Chill overnight (or at least a few hours). Pour more of the mixture onto the cake as it soaks in while it chills, until all of it is used.
For the topping, combine cocoa powder, icing sugar and a small amount of the double cream in a stand mixer. Slowly add the rest of the double cream and whip until soft peaks.

But sometimes they kind of *milk it.*
*Written instructions:*
1)Separate three eggs. Yolks go into a separate bowl and whites go in the bowl of stand mixer.
2)Add 90 grams of caster/granulated sugar to the egg yolks and whip for 2-3 minutes until pale and thick.
3)Add dry ingredients(70 grams: plain flour, 15 gram: cocoa powder, 1 teaspoon of baking powder, 1/2 teaspoon of salt) to the bowl with whipped egg yolks and sugar.
4)Use spatula to incorporate dry ingredients.
5) Add 2 tablespoons of milk and 1/2 teaspoon of vanilla extract to ease the mixing. Fold until fully combined and set aside.
6) Next, whisk the egg white on slow speed until large bubbles form.
7)Then, increase speed to medium-high and whisk until peaks hold shape.
8)With mixer going on the same speed, gradually add 30 grams of caster sugar and keep whisking until stiff peaks form.
9) Take a dollop of whisked egg white and combine with chocolate batter.
10) Fold egg whites into the batter very gently(cutting through middle and scooping inside) using only half the egg whites at once.
11)Butter the bottom of the tin and put batter into it.
12)Use a palette knife to even out cake batter.
13)Bake at 160C for 20 minutes.
14)Turn the oven off and let cake cool in the oven for 10 minutes with oven door closed and for additional 10 minutes with the oven door open.
15)Combine 2 tablespoons of whole milk and 2 tablespoons of cocoa powder.
16)Combine 400g of Condensed Milk and 170g of Evaporated Milk with milk and cocoa powder paste.
17) Use a fork to poke holes in the cake.
18)Pour the milk mixture on the cake and chill it overnight or atleast few hours.
19) Take 1 Tbsp or cocoa powder, 2 Tbsp of icing/powdered sugar and little bit of double cream and mix until combined.
20)Then, slowly add rest of the cream(total 200 grams) whipping until soft peaks form.
21)Spread whipped creams on top of the cake and top with sprinkles.

I learned about Tres Leches when I was 12 and when I was 17 I baked my first one and Its now a special treat cuz if I dont do that I'd be 1000kgs
**For anyone attempting to make the larger version of this cake, be aware that there is a typo in the recipe above^^^ which calls for 3/4 tsp of salt (waaay too much) instead of 1/4 tsp salt. Don't do what I did and end up with a salty chocolate tres leches ***

I've never really liked tres leches because the ones I've had have been dry and soggy both. But yours always looks amazing. Maybe I just need to make my own. I didn't like macarons until I made them myself. This might be similar. Lol

I made this on Sunday, and we had it for dessert on Monday and Tuesday (tonight). OMG - It's so good. I think it was actually better today - maybe the flavours developed more... Definitely going to make it again.

Thanks to both you and Gemma my "Discovery of 2020" was BISCOFF!! I've made the cupcakes several times and made the SMBC to go along with them. I have since made Biscoff brownies and French toast with bananas. Just about every morning I have a slice of toast with some Biscoff and my morning cup of Joe. You can make it at home, just put 400ml of whole milk in a pan and let it cook at the lowest temp until you have 170ml of it

I i dont know if its just me being thick(probably) but im confused on baking times. I get the 160, is it bake on 160 for 20 mins, then turn oven off then cool in iven, door closed for 10 mins then open door and leave for another 10 mins? Sorry sounds really stupid and im guessing that is what is meant but just wanted to make sure?
