If I have already started a career using the database would I be able to edit that database again in the edier add another custom player and load it up in my already started career ?

no you have to start a new save, depending on what you want to change there is a live editor you can buy that will edit current saves

Just as a quick rule of thumb, have you made sure the person you've created aren't retired or made extinct. And to put them at a club you need to go into the contracts screen.
