When you click the stations you will be stopping at, you can hit the button that says copy to coupled and it will copy that info to all other cars as well.

Two questions in the video I wasn't able to see the observation car at the end of the train and so I think that the observation car is end specific meaning that one end of the car is meant to be on the end of the train and so if you just move it to the other side it will not work is that correct meaning not only would you have to take the car to the other side of the train but you would also have to turn it around? Or do you just need to run it to the other side Additionally my second question is in order to fulfill your passenger obligations do you need to run the passenger cars to each station once or does it need to go to all the station once and then come back so it makes a full run?
So yes the observation car is end specific so you would need to put it at the back of the train to work. If you want you can stick one at each end so that if you turn your train around, you won't need to turn the entire train around, just the loco. To fulfill all passenger obligations you will need to stop at everything station. Hope this helps
