It goes beyond food freshness. The taste difference is genetic. Having people try durian wafers is enough to see if a person tastes sweetness or rancidness. It's the same as people tasting soap in cilantro.
What I've learned is that mushy doesn't necessarily mean it's bad, and I've come across several species/individual fruits that looked good but tasted awful. I think they should've eaten the durian in this video off the seed instead of scraping all the flesh off and piling it up. That's like blending a piece of sushi before eating it. The texture and mouthfeel is all gone.
@@rd9301From my experience, the mushy one is extremely good eaten ripe, preferred by many. The packaged one tho, it has been on the shelves for so long that the smell and texture deteriorated so badly, making them tastes weird in the mouth.
Yeah, the fresh one tastes more mellow and the smell is much more bearable and not so pungent. The packaged one tho, depends on how long it has been on the shelves, the smell and taste could pull a 180.
Haha durian is an acquired taste so for first timers, it might be hard to eat and stand the smell. So yeah as some commenters here have said if you live in countries that sells/produces/imports/exports durians, the smell/taste is not a big deal. First timers might want to try something like durian cream puffs or cakes as their first taste. Hopefully they will try durian in the future again.
It's not a big deal because you eat a freshly picked one, most of packaged durian aren't fresh anymore, the one's Miko eat is already beyond creamy, is has become slimy/fermented that it smells bad, the fresh one isn't actually has a strong smells~ I actually has a big durian tree in front of my grandma's house, the fruit can be bigger than an adult human's head, but peoples chop it off because they think it's too dangerous for peoples walking under it...

One thing with durian is that the odor and flavor compounds degrade at low temperatures, especially when frozen or refrigerated for long periods of time. So if you are eating it in a different part of the world from where it is grown, it might not taste like fresh durian. I've tried it a few times where I am in Canada and it usually tastes off.
