You can use the leftover chicken to make the best sandwiches or you can put it in a Laksa using stock you make from boiling the chicken carcass -- trust me on this -- it's great

I have done this from another site, what I do is mix the curry paste with the coconut milk in a bowl, add the pre roasted potatoes and then add uncooked veg and mix it thoroughly then back into the roasting dish!
Great dish! Our whole family loved it! Used different paste, tandoori on the chicken and tikka masala in the sauce, just because we were running out of paste, and it turned out great.

Also a novice cook can easily prepare this. There isn’t too much work involved either. It’s also dairy free for those who need to use dairy free recipes. A real winner. 👏👏
