I really wish from the bottom of my heart that one day Ichang and Jimmy will open a Malaysian style restaurant/cafe in HK. If that does happen, I can say that I am truly proud to have IChang and Jimmy representing Malaysia in spreading our food and culture. I'd probably cry of joy too 😂

I think since you have the pressure cooker, you can cook all the steps using only the pressure cooker. You don’t have to pre-boil the meat at all. After you come to the part of mixing and cooking all the spices and blended chili, then you put the raw beef in, add the kicap pekat etc and lock the lid of the pressure cooker, set it to 1 hr. after that, you can open it and continue adding salt and sugar to your taste. If by then the meat is still not tender enough, you can continue pressure cook it for another 10-15 minutes more.
Small tip... don't ever change water or throw the broth. Just get rid of the scum and continue cooking the brisket. Big part of the flavour comes from the broth. Anyhow, it does looked delicious in the end!

Normally , we add kicap manis for enhance the taste of Daging Hitam..
For enhance the colour, we add dark soy sauce. Dark soy sauce do not have any taste...we use to make the Daging Hitam bacame darker in colour...
This cuisine is really Mamak Penang Style...

Instead of kecap manis, do use dark soy sauce...it will definitely make the sauce darker in colour. If you find using dark soy sauce and the sauce is not sweet enough, do add some rock sugar to sweeten it ^_^. Hope it helps.

You can blend some raisins with the chillies and add a lot of fried onions, a real lot of it into the paste.
To make crispy fried onions, you have to sprinkle a little flour .Some people like to use wheat flour, rice flour, or corn flour. Each has a different texture & unique taste, so it's up to you which one to use

Yes .. make sure the onions are dried from the water after washing before sprinkling with the flour,fire control is also important. Make sure the oil is properly heated but the frying flame is in a medium to large state

If you want your onion to be crunchy, mix the onion with a little bit of wheat flour/rice flour before fry. I used to mix with wheat flour and it crunchy delicious. Put some salt to. And when you fry it, always stir it until the onion brown otherwise it could burn or uneven.
Yes use shallot instead of onion the smallest onion but be careful it will burn quickly
I think ichang and jimmy have surpassed many Malaysian's cooking skill now. You guys are just amazing! if its happened for you to open a malaysian restaurant, I bet it will become very successful. you can cook many dishes already!
Depends on what kind of brand dark soy sauce you are using. Most Malaysian dark soy sauces are tick enough and very dark in color especially dark soy sauce brand 'Cap Ayam'. You can also substitute white sugar with brown sugar to make the caramelization much easier. Try to reuse the water that you use to boil the beef if the water is reduced just add more water until you find your tenderness.

Good job on this. Brisket is a beautiful cut of meat, no need to boil and rinse so many times as you will loose that great flavor. Use dark soy sauce also known as kecap pekat, kecap manis is too sweet if you use too much. Lots of good advice in the comments. Love you guys! 😊
It's amazing that you are able to buy all the ingredients to cook your favourite dishes. Surprisingly, the lemon grass, pandan leaves etc are much more fresher than our local wet market/ supermarket in Malaysia.

When ever i cook curry or any gravy or saucy dish, i will make sure i make extra sauce or gravy. Save in container and in the fridge. Later, i will heat it up and dip my bread or frozen prata in it. Boom!

try kicap pekat ..it is thick dark soy sauce that easily make your dish become dark/black and it is not sweet or salty... therefore you still can add salt or sugar to your dish to fine tune the taste later

There's a Malay term called "Hitam Manis" when you want to call someone who is tanned or dark-skinned but they look sweet to you. So IChang can call Jimmy "hitam manis", especially after he eats his favourite Daging Hitam!😄

Btw for the drakness usually we use kicap pekat ..this kicap has a light taste and commonly used for the colour purpose..make it more dark😂
If you want crispy fried onions. Coat it with flour before frying. Any kind of flour will be fine

If you want to save more time on cooking the meat (this method is helpful with tough meat parts), you can add rooibos tea during the boiling process. Just campak a teabag in it & check the softness every now and then.

Thats look delicious.. 😊 Maybe they use thick soy sauce (but this type soy sauce is a bit bitter if used to much, so be careful.. This type of soy sauce used in malaysia hokkien me, because it give dark color).. Some recipe used sugar (normal/brown/melaka/apong).. Different place has different recepi..
Ichang, i want to share some tips. Although in this video you make fried onions but today i want to share some useful tips (petua) how to make anchovy more cruchy. The tip is. Before you fry the anchovy, you need to soak anchovies with hot water around 5 minutes. After that you can fry it. Trust me. It will be more cruchy and less salty.

Ichang and Jimmy, to make it more SEDAP , you guys have to put MSG .every restaurant in Malaysia they put MSG..that's why their food is so SEDAP
the umami of this dish comes straight from the tomatoes and soy sauce. regardless its a complex dish with a lot of layer mixed together....
to make it darker without adding more kicap manis, you need to use the "kicap pekat caramel".. that kicap definitely will make it look more hitam and darker 👍🏻
Exactly, you need special kind of kicap for this type of dish.
you can also use a few pieces of jackfruit leaves when boiling the meat. it can help soften the meat quickly
Different people different style of cooking. My way.. When I cook daging masak hitam i used to marinate the meat first with tabasco black sauce or gula hitam.. Just 1 spoon might do..when cooking then use kicap pekat manis to finish the taste n colour.

The longer you leave it simmer the darker it gets. Probably you can cook the meat slightly shorter in pressure cooker and let it cook with the spice mixture longer with more broth.
And another suggestion for the name. "Daging Seizure Hitam" 😂😂

The darkness is caused by browning sugar/molasses. It's sold in a small bottle in supermarkets. We usually use that for our daging hitam recipe

Looking very sedap! The 1/3 beef brisket daging hitam meal is more expensive than the RM114 nasi kandar meal. To make it darker just add dark soy sauce. Happy couple is cooking together & eating a lot 💯👍
