    Why eat radishes?
    Vitamin C Content
    Snacking on radishes can help you reach your daily vitamin C intake goal. For their size, radishes have a high vitamin C content. A 1/2-cup serving offers 8.6 mg, or 14 percent of the recommended daily intake. Vitamin C works in the body to rebuild tissues, blood vessels and maintain bones and teeth. It is an antioxidant vitamin which is reported to fight cellular damage that can lead to cancer and other diseases, according to the University of Maryland Medical Center. Vitamin C is water soluble, which means it is not stored in the body and you must replace it daily.
    Fiber Content
    One-half cup of radishes contains 1 g of fiber, and while that may not seem like a lot it is actually 4 percent of the recommended daily intake, according to the CDC. If you slice radishes and eat them with a green salad, you are taking in additional fiber. A report from the Harvard School of Public Health states that adding fiber to your diet lowers your risk of diabetes, heart disease, diverticulitis and colon cancer.
    Cancer Protection
    Radishes contain a group of compounds called isothiocyanates, which are shown to be effective against certain cancers. Researchers at Jawaharlal Nehru Technological University in India tested various parts of the radish plant against human cancer cells. The results of their study, published in the September 2010 issue of "Plant Foods For Human Nutrition," show that the compounds in the radish bulb, or root, affect genetic pathways in the cancer cells, inducing cancer cell death.
    Diet Friendly
    Despite having positive benefits on health, many will not add a food to their diet if they feel it may jeopardize weight loss. In the case of the radish, it is a dieter's friend. A 1/2-cup serving of radish slices contains only 9 calories and 2 grams of carbs. Other considerations for the radish include the additional vitamin and mineral content. Along with vitamin C the radish offers folate, B vitamins and vitamin K as well as essential minerals that include potassium, manganese, magnesium, calcium, iron, phosphorous, sodium, copper and zinc. Radishes can be eaten raw or cooked in casseroles or soups. Your imagination is the limit.

      For anyone thinking about this ...... just wanted to give a shout out that I got the kit and it is AMAZING ....... everything you need to get started with fermenting!! Fermenting for health, and have been eating ferments at least one meal a day .............

      Stacy, is there a fermenting technique w/o buying that silicone lid? Also where do you store your food for long winters? I can’t have keep fresh radishes all winter to keep making short term fermented items. I’m very confused by what I keep hearing from those promoting fermentation. If it depends on refrigeration ... I just can’t see how I can utilize it thru winter

    My husband had many health issues including liver disease. Since we have been fermenting, his blood tests have been continually better and he feels so much better. His body is absorbing minerals that it wasn't before. He has a spoon full of gingered carrots in the morning and nibbles on kimchi and fermented cauliflower, radishes, onions, and peppers. He had a stomach full of ulcers in January and we just went last week for another scope and the ulcers are gone, but his stomach is still a little inflamed. We won't let that get us down and will continue on this fermenting for health. So excited to see him feeling better.

      That is awesome, Stephanie Pearce. I love fermenting. Stacy got me hooked on it last summer with her Hot Fermented Salsa. At that time I was over run with cherry tomatoes & hot peppers from the garden. I made quarts & quarts of it. I haven't succeeded in getting my husband into it yet. That is so exciting to hear how much fermenting has helped your husband!!!

    I'm Wendy from Masonville New Jersey and I'm a homestead homie! I've been fermenting vegetables that I get from Aldi like the I started some sweet potato slips thank you Stacy! And I'm going to be putting my potato eyes in the dirt, I have recycling buckets that we get from our County and we don't use those anymore but I'm using them for my potatoes and I have a big one for making compost in and I'm shredding paper for my beds and my compost bin thank you so much for what you're teaching us and this food is really good I can't wait to start growing stuff! I'm a homestead homie

    Boy, do I have the fermenting BUG! I live with my son and his family in their house but I grab vegies and my daughters' mason jars and whenever I can get the kitchen to myself I'm goi'n to it.     I found your RUclips channel while we have been quarantined. I have been watching some videos over. Thank you so much for doing what you do. I am an herbalist and reflexologist and a homesteader at heart. We have been fermenting like crazy. Today I made fermented radishes. And now to finish up my cauliflower Mac & cheese!

    I just did my first ferment today, and I could not be more excited to explore this. I am transitioning to a 100% natural lifestyle. I already don’t eat any processed food and I am in the process of phasing out all of the bad chemical products in my house, like laundry detergent, soaps, lotions, etc. you name it.

    What a treat to come home from a 12 hour shift at the Detox and relax with you guys and learn about fermenting! I Love Radishes!! and now I know how to keep them for longer, by fermenting them. Thanks for Teaching that, its such a Great idea!! I'll head to the Farmers Market to get some organic radishes and Himalayan Pink Salt too! Can't wait!

    Love the video's. I have 8 acres and grow much of our own food. No animals yet, but get manure from my neighbors farm. Growing corn, potatoes, peas, radishes, beans, beets, onions, cabbage, broccoli, tomatoes, etc. Love it. Thanks for your fermenting video's.

    I have four ferments going now!! I really need to buy more pickle pipes and pickle pucks!! I have the fermenting bug - yes, indeed!! I have put up my mother-in-laws garlic dill cabbage (Romanian style). We took down a pint (couldn't even wait a whole week, and ate it last night, and wow tastes just like hers used to years ago!! I was soooo happy and hubbs Harry loved it too! I am also making some Guardinieria (Italian) veggies with hot pepper! Can't wait, but I must. Thank you for this show. God bless!

    Aloha. Trying the lemonade, not quite fizzy yet. You mentioned the weather, we just received 9" of snow on Saturday. This is central NM and the usual last freeze is April 10-15. Well, we hustled to get everything not planted into the greenhouse, covered up the raised beds, but alas, the wind got underneath the plastic and we lost out tomatoes, lettuce, onions, green beans and squash. Time to start over. And last but not least, FERMENTING FOR HEALTH is the way to go!

    I love how when radishes are fermented the colour gets sucked into the brine so you get pink brine. Same with red onion lol, I love it!

    Hi Doug and Stacy...we tried fermenting cauliflower for the first time. I don't think it worked. When we opened it it smelled like rotten eggs. My old man ate it anyway. It was hot from the peppers but could not have been good. We decided to try it again but this time with the mason tops instead of burping them. So far so good, one day down 13 to go. Thanks for being an inspiration.

    Fermenting for Health! Ordered the standard mason jar pebbles and pipes! Got a beet, cabbage and carrots to try (separately). Delayed getting going on this - my father had a stroke earlier this week, but am hoping to do this in the next day or so. Cant wait!

    Oh, that jar of radishes looks so pretty! I love radishes!
    I've been spending the last 2 months watching all your videos from the beginning, and I've just made it to this one. I have a spiral notebook, and I've been writing down all your recipes and potions. I've made the fermented grape tomatoes with basil (they are SO good!), kombucha with ginger - delicious ! the fermented red cabbage and beets - a great combination, fermented carrots with ginger - another wonderful combination, the beeswax body butter (everyone at work wanted their own jar of it!) and the fragrance diffusers. I got a brush and have started dry brushing my skin. Wow, that really makes my skin feel smoother. And I've stopped using commercial shampoo, conditioner, deodorant, and face cream. I've been wanting to go more "natural" with my diet and daily routines, but I didn't know how to get started. You two have been such good guides! I used your discount to get the Masontops kit too, and you're right, it really makes the fermenting easy to do. My grownup children really enjoy the fermented foods, so I'm referring them to your videos to learn how to do it themselves. Thank you, thank you, thank you!

    I am fermenting radishes I just pulled from the garden.
    I just ate a bread and butter radish sandwich. Yummy...I fermented dikan radishes last year 2021.
    I plan on making fermented lemon as soon as I get some lemons.

    I'm loving all these videos! I took yesterday off due to the weather and got several fermetning projects going! I started Garlic, Onion, and Mustard! My wife thinks it's funny how the kitchen is full of jars and smells again (I did other ferments for Christmas) I can't wait to start growing things to ferment my own foods. Next stop is the farmers market to get some good local grown things!

    When I was growing up we use to fill a 50 gallon crock with sauerkraut every year. We kept it in the basement for use in the winter.

    Ok....so this is the second time watching through this...I have been bitten by Fermentation bug...I caught it from Stacy...I finally got a weight and a pipe...I. een trying the ziploc bag with water in it as a weight and seal for sauerkraut...

    I am currently fermenting carrots with ginger, some mixed greens (kale, spinach, beet greens) and radishes. We decided to try the radishes and then saw this videos.

    Yes folks I have the fermenting and scrub bug. Did a blueberry etc. scrub the other day and did the peach today. Will be starting on the fermenting shortly but for now just watching the videos. I know I'll like it because of other things I'm doing.

    Fermenting for health!!! I'm loving all the fermentation videos. It helps give new ideas and different spins on food I already buy and adding fermented food to our diet. Have you tried purple daikon or watermelon radishes? Purple is my favorite color so whenever there is an option to buy that food in purple I choose purple :)

    Yes we do, we do have the fermenting bug because we are Fermenting for Health! We love radishes, never tried to ferment them whole though, only a few in my kraut at different times, looks like a definite winner. That lemonade looks absolutely yummy! Can't wait to get some lemons and get that started. Stay safe.

    Just purchased a Picklemeister gallon fermenting kit and a wide-mouth fermenting top. Just made garlic dill pickles and garlic dill green tomatoes. LOVE this gear. Glad I found this about the radishes only I wish I'd seen it earlier in the year...lol.....bumper crop of radishes

    Fermenting for Health - yes! I can do that. I only need the quart size because it's just for me. This recipe is perfect for me. But I need the kit. I can't rely on burbing the mason jar manually. Fiber is something I so need because I'm having digestive issues. Thanks Stack & Doug.

    I always thought that radishes were more for looks and crunch. But I have been seeing so much saying they are good for you. You guys are starting to get my interest in fermenting, between the lemonade and radishes. I bet that the daikon and watermelon radishes would be great fermented and pretty too. Thanks guys

    Thank you for sharing the results of your fermented lemonade. I have always been intimidated by fermenting but you make it look so attainable. I have been saving up to be able to purchase one of the kits that you recommended! Thank you so much for the videos!

    I did find your fermenting link and already emailed them - I decided to burp the lemon drink fermenting ( I had left question for you guys but just decided to use common sense,ha, ha, no ka,boom). Those rubberish fermenting air releases will make everything so much easier to vent the bottles. Thanks, wonderful videos.

    Hi Doug and Stacy. I want you to know that last year you introduced me to fermenting and now, I’ve been fermenting almost everything. I even have been using stones instead of pucks. I’ve been making ginger bug, water kefir and Kombucha. OMG! I’m so hooked. I love you guys.

    Thanks guys/ I really appreciated the info in this video. The added bonus of information you added under the Show More tab was great! I love radishes. The fire in the bite and the earthiness is terrific. Now I have one more way to prep and eat them.
