I love French onion soup. I use the amount of fat needed to caramelize diced onions, add chicken stock, (or any other kind), add diced croutons from whatever bread I have around, usually my homemade sourdough, add grated gruyere. Broil to melt the cheese. So simple. So good. No flour, sugar, or wine necessary.
Oh my word...that soup is Panera worthy! Thanks for showing us how it was done...I always appreciate the way you trouble shoot, and tell us what you would have done differently. Did Steve love it? Looks like it's going to become a staple on the winter menu from now on! P.S. If you're not familiar with Panera restaurant, it's a popular soup and salad place here in the States.
I have a small fan on my kitchen countertop. It gets put on when I'm cooking or cleaning up so I can stay cool, it gets put on when I chop onions. Didn't you once buy beef broth that had wine in it? Would that work? I thought your crusty bread with the melty cheese looked amazing! I've decided that recipes lie when they tell you how much time that step is to brown or caramelize onions. It's way longer. Thanks for sharing.
That soup looks delicious . How nice to be able to use your regular bowls and not have to have french onion soup bowls that you need to store for the few times a year that you actually use them

Yum! French Onion soup is one of my favorites. I thought it was harder to make....it certainly takes time though! I can't wait to see more recipes!
It really is easy. Caramelizing the onions takes the longest but it's worth it for the flavour.
