Have to repeat it each time you cut the cheese cake, otherwise it will look dirty on the second cut. I learn from the hard way as my friend refused to teach me as she learnt it from her nephew who was working in a Cafe, not the owner. I am willing to teach anyone who is interested and provided I know. Happy Baking !!

That is known as Bain Marie method. The steam helps to soften the cake so don't try to save on foil.For many cakes, this is still a good way.
