  • Ingredients for cake :
    4 egg yolks (蛋黄)
    1 egg (全蛋)
    20g caster sugar (细砂糖)
    1/8 tsp salt(盐)
    65g corn oil (玉米油)
    45 water(水)
    100g plain flour(普通面粉)
    10g corn flour (玉米粉)
    4 egg whites (蛋白)
    1 tsp lemon juice (柠檬汁)
    80g caster sugar (细砂糖)
    Filling :
    350g durian flesh(榴梿肉泥)
    100g milk(牛奶)
    2 egg yolks(蛋黄)
    40g caster sugar(细砂糖)
    1 tbsp gelatine powder (鱼胶粉)
    350g UHT whipping cream(动物性鲜奶油)
    150g non-dairy whipping cream (植物性鲜奶油)

      請問蛋糕的部分是用中筋麵粉嗎為什麼不用低筋麵粉呢?

      @@yuli8330 其实都一样用途,只是口感上有区别。 低筋面粉做出来的蛋糕比较细腻,反而中筋面粉稍微出粗。但是我比较建议你用 self raising flour ,成功率会比较高。

    اولا / 4 صفار بيض بيضة رشة ملح 20غ سكر ناعم 65غ زيت نشاء45غ ماء 100غ فرينة 10غ نشاء 4 بياض البيض ملعقة عصير ليمون 80غ سكر ناعم
    ثانيا / 350غ فاكهة الدوريان 100غ حليب 2 صفار بيض 40غ سكر ناعم ملعقة جيلاتين بودر 350غ كريم مخفوق 150غ كريم مخفوق غير ملبن.

    thx for the recipe i'm going to make this at my dad's birthday since my family grew up is Bangka we all love durian ( well almost all my family member ) this is the cake my grand parents get every year and they love it

    请注意了 !!!我做第一次时 whipping cream 打发成比较硬性 加上榴莲醬过后拌匀馬上成为 细豆花和液体了 🙄🙄🙄 第二次 我更注意了 打发 whipping cream 成 轻松一些 .,(不是硬性发泡 ) 加上榴莲醬拌匀 成功了😁

    非常感谢您的分享。。我照着做终于可以成功做成了第一个蛋糕,之前做了很多次都失败。。我以为蛋糕是很难做到成功的。。但。。按照您的方法做简单又好吃。。非常开心、很有满足感。。还好看见您的视频。。本来打算放弃不再学做蛋糕的!😊👍

      鱼胶应该是为了稳定奶油的 也是吉利丁粉 可以用吉利丁片吧

    hi Katherine, i followed 140 for 50 mins but abt 43 mins it started to cracked abit, then i covered with aluminum foil and increased to 160, the cake cracked like huat kieh. may i know why? TIA

    I have tested the recipe yesterday. I really love it, the durian custard has just the right amount of sweetness, the way I like it. However, it did not stay fresh long, the custard went bad after 1 day even when kept in the fridge. Any tips, or comments something that I did wrong maybe? Or is it meant to be eaten immediately, and not be kept?

      From what I know, the gelatin is added to the whipped cream to make it more stable/firm. Common in commercially sold cakes
