This was foreshadowed earlier in the movie when the tour guide in the afterlife shows the closet of the exorcised spirits, and how it's "death for the dead".
On hindsight, I took it as Otho performing a spell that promised bringing the dead back to life. The only catch is that it was literally bringing the dead back to life. Barbara and Adam's lifeless bodies had been rotting in the ground for so long that their decaying on the spot is simply them becoming what they actually are: Living Corpses.
It’s funny how little effort it took for Beetlejuice to reverse what was happening to them. He simply mimes a golf swing, causing them to fall down and then they gradually return to normal.

Still sad to watch because you care so much about adam and barbara. This movie has you laughing one minute when they're dancing at the dinner table and on the vergenof tears with this scene. The musical score is so haunting as well.

You’ll have to forgive my ignorance, I always thought that when that guy read the book out loud, he found a chapter that could resurrect Barbra’s and Adam’s bodies, and place their souls back in them, only to have them decay, because they were dead for a long time, and it was against the natural order of things. At least that was the best explanation I could assume, seeing as how I never really understood what was happening with them. But what you say makes more sense, and fits it all. Thank you.

But I suppose exorcism is most likely.

I realize that now as an adult, Barbara and Adam took physical form and they started decomposing but I don’t think they were in pain.
I agree, there physical bodies had been dead so long, they started to breakdown, but their souls were trapped until Beetlejuice stepped in.
Why were they decomposing? What was the point of the scene?
It was supposed to have been a seance, but Otho accidentally performed an exorcism, which explains why they were beginning to rot.

As funny as Lydia's line about changing a tire is, it's Robert Goulet's stifled laugh that really sells it.
I always remember this part from when I was a kid when they come back start decaying and the guys jaw falls off.
