As a texture, it is firm, chewy and a bit oily.

Make Sure the Fish Is Fresh - For a savory taste of the mackerels, you need to prepare them fresh. The fresher it is, the more you get from that fantastic ocean taste. Oily, dark flesh fishes lose their freshness quickly to take a strong 'fishy' taste.

Yeah its too bad :( i hope its not bcs the show feel inferior abt how moat of Chinese cooking look like and opt for western presentation. I'm an Asian myself, not Chinese but a lot of my country's dishes are inspired from Chinese dishes, which is, the presentation might be really honest, everything is mixed together, and dumped together in a big plate, doesn't at all looking like fine dining presentation, but very hearty and homey. I dont like plating homey and hearty Asian dishes like this with tons of garnish that only there to make it look pretty but arent part of the actual dish. Looks so fake and outdated :( had he just dumped the fish, vegetables, and broth in one big bowl and sprinkled some chopped green onion/fresh cilantro it would look 1000% more appetizing
