- Today’s recipe is so incredible that you may look to try it right away after you watch this video, especially if you’re into vegetarian, gluten-free, grain-free, healthy and tasty bread recipes!
Instead of grain flour, our incredible mini loaf breads are made with red lentils! This incredible legume is low in sodium and saturated fat, high in potassium, fiber, folate, and plant polyphenols that have an important antioxidant activity. They are packed with healthy nutrients (imagine in just 1 cup of raw red lentils you’ll get: 45.91 g of protein; 20.7 g of fiber and 14.19 mg of iron for a total of 687 calories). On top of all those impressive nutritional benefits, they taste great and they are so versatile that you can use them in the classic soups and stews or in making the best gluten-free bread, you would think of, like in today’s recipe! In order to make our lentils mini loaf breads even more nutritious and filling, we added cottage cheese (26 g of protein) and eggs (12 g of protein) to boost their protein content even more!
If you give these mini breads a try, I’m almost sure you’ll be surprised how good they are 🙏
Bake in a preheated oven for 40 minutes at 350 °F / 180 °C
Ingredients:
These amounts made 9 lentils mini breads
1 cup (190 g) red lentils (687 calories)
2 eggs (148 calories)
1 cup (250 g) cottage cheese or any soft cheese of your choice (240 calories)
4 tbsp. (55 g) olive oil (480 calories)
1 tsp. (6g) salt
black pepper (optional)
½ tbsp. (7 g) baking powder
1 tsp. sesame seeds or other seeds of your choice for garnish (optional)
1 tsp. poppy seeds or other seeds of your choice for garnish (optional)
These qualities made 9 red lentils mini breads. Per each mini bread you’ll get ~173 calories and ~9.3 g of protein!

Do you have the nutritional info such as how many carbs etc?
Made them today. Perfect - no problems. Tasty and filling.
I’m so happy to hear you’ve tried the recipe and enjoyed the result 😇
Thank you so much for sharing with me your feedback 🙏🥰
These look amazing! Easy there a way to make this recipe dairy free to replace the cottage cheese with something else due to allergy? Preferably no nuts, gluten, soy. Thanks
Coconut cream or a rich milk is a perfect substitute 🙏
Red lentils are light in texture so it's best suited to make bread. If using the brown or green they are heavier lentils hence they will be dense in texture. Try using 2 Tbs of Psyllium husk to the batter once in the bowl, not to the blender. Let it rest for 10 mins n it will be lighter in texture.
Will these work in a muffin tin if we don't have a mini loaf tin?
Yes, absolutely! You can use any of your existing muffin pans (make sur you pour no more than 1/2 a cup of batter). You can process the same way for the baking part 🙏🥰
Greetings from Denmark. I have just baked those small breads. They are easy to make, and they are delicious. I didn't have red lentils though so I used green ones. Thank you for this recipe and thanks for let it be companied with that wonderful music.
Thank you for your kind and supportive words 🙏
I’m so glad to know you enjoyed your lentil mini breads! Thanks a lot for sharing your feedback with us all 🤗💓
did you soak the lentils overnight as opposed to a couple hours? All I have are green and brown lentils at the moment so I'm curious if soaking them overnight would be more ideal.
Any substitutions for the cottage cheese? Doesn’t have to be dairy free
Greek yogurt, thick plain yogurt and sour cream are all good alternatives 🙏
No dairy recipe plz

You’re very welcome 🙏
So glad you enjoyed the breads. Thank you for the feedback 🫶
I baked as bread loaf, after taking out of oven it sank from the middle, bottom part is quite dense..any help.what i did wrong( i used gluten free baking powder, did it make the difference?)
Sorry for you 🥲
I don’t think the gluten free baking powder is the cause of dense center! It could be because of a runnier batter (have you drained the lentils really well)? It could also be the baking time. It takes way more the height of the bread is too high (it could be that, actually). I recommend to use a larger baking pan that you can get used to the right batter consistency and baking time before baking in a loaf pan 🙏
Hi! Do you think i could use dairy free greek style yogurt alternative? I have no problem with the eggs but dairy is a problem for me.
Yes, you can use a non dairy version of Greek yogurt or sour cream. They work perfectly well too 🙏
Please dont expect them to tastes like ordinary bread , they are very nice fresh but need to be eaten that way ..
This just made my year.
And, you just made my day with your nice comment ❤️
This is my second batch and I love these! I put everything bagel seasoning on top. Bonus, my family doesn't like them so they're all mine!!

SOOOO Tempting delicious recipe thanks for sharing such a nice Recipe 👍👍👍 Great job well done 👍👍👍👍
Thanks you 🙏🥰
These look so good! Can you taste the lentils? Or is it a more neutral taste? Also, does it have to be red lentils? I may try to make hamburger buns with this recipe.😊
Thank you 🥰
No, you don’t really taste lentils. They have a taste quite plain and rather like a pain brioché.
Yes, to get this kind of fluffinesses and neutral taste it has to be red lentils or skinless mung beans. They too, have a “floury” texture and a plain taste 🙏
Looks great and I look forward to making some. Just a little note - 4 tablespoons equal 1/4 cup. :-)
@@cynthiaschaeffer650 yes, you’re right for the 4 tbsp 😅😅
It feels like it’s less oil when I say 4 tbsp instead of 1/4 cup 🙃
Any alternative for the oil, I’m on slimming world. Thanks
You can simply skip it! The breads might be slightly drier without a source of fat or you can add an extra 1/4 cup of cottage cheese 🙏
Hi! Loved it.. but it seems as though mine sort of hollow under the crust.. any idea what I'm doing wrong? Haha these have been a life saver now that I can't have wheat! So thanks
I’m glad you’re liking the concept and sorry for you not having the best result on your first trial 🙏
That hollow scenario is likely due to a slightly runnier batter. Try to really really drain well the lentils from the extra water after you rinse them. That might have been the cause. Also make sure your baking powder is fresh 😇
What to use as cottage cheese substitute
You can use sour cream, Greek yogurt or a plain thick yogurt 🙏
Thank you for a fabulous GF bread that is easy to make, and really delicious. Note: I strained the lentils for an hour and then shook the sieve a couple of times to make sure any water drained out.
You did great 👍 That’s the key part of all of my lentil bread recipes to be 100% successful. Very glad you loved them 🙏💓
Good day. What type of baking pan did you use? Non stick?
Yes, you need to use nonstick baking pans and even use parchment paper on top of that 😗 Lentil batter tends to be very sticky, please be aware 🤗
I loved them! They are tasty and definitely like regular bread.
Glad to know you enjoyed 🙏🤗
4 cs. d’huile d’olive (480 calories)
1 c. de sel
Du poivre du moulin (optionnel)
Thank you! Great tutorial, simple ingredients. Can we use flaxseed or banana to substitute the eggs? As you responded to one audience added more cottage cheese.
Hey Nancy,
Yes, if you want to keep the taste plain and close to regular bread, you can simply skip the eggs and add some extra cottage cheese. But, I think, you’ll still get good lentils bread like these if you prefer to replace eggs with a banana or flaxseed. The breads will be sweet in the first case and will taste the flaxseed in the second. If you try one or the other, let me know how it works 🙏
Wow fantastic ❤
How can i eliminate baking powder/soda can i add yeast instead and do natural fermenting?
Yes, absolutely 👍 You can do that too 🤗
Can someone help i dont have bread mold.... What can be the alternative?
You can bake it in a large pan or in regular muffin tins 🙏
Lost me after the soaking. Requesting a vegan version, please!
Please, check out my other red lentil bread recipes. I have quite a few totally vegan for you 😇
Awesome recipe! Just tried it and my spouse loved the result!
Thank you for sharing your thoughts 🙏 So, so glad you enjoyed it 💓
Can i leave the rest of the dough in the fridge ? If yes for how long ?
I never do that to be honest! I prefer baking them in bunches and store in the freezer for up to 3 months (or in the fridge for a week). They freeze well, just preheat and enjoy at anytime 🙏
Brandenburg concerto!
This might be unpopular opinion, but I baked these last night, been wanting to try it for weeks! I was so excited!
Unfortunately, the taste was not to my liking …I found the egg-taste overpowering. The texture was good, a bit like a scone / biscuit. But I just couldn’t stomach the flavour ☹️
Watching the video again, I definitely followed the recipe perfectly.
I totally understand that this bread may not please everyone 🤗
If you want to try it again, you can skip the eggs all together if that what you find repulsive. Eggs give the bread some fluffiness. You can just add an extra 1/4 cup of cottage cheese and see if you like it better without the eggs 🙏
Use flax eggs: to make the equivalent of one egg use 1 tablespoon of ground flax and 3 tablespoons of water. Give it a quick stir with a fork, wait 5 minutes and there you have it. So for two eggs, double that. Vegans do this all the time.
Can i use almond milk instead of cottage cheese?
Yes, absolutely, you can use almond milk 🙏
I definitely want to make these, but don’t have a mini loaf pan. Do you think the recipe will work in a regular size loaf pan or perhaps better in a muffin tray?
Yes, definitely, you can use a regular muffin pan 🙏
If you make it in a loaf pan the baking time will change, so please monitor it.
Also, you can slice the loaf of bread n keep the slices in little individual zip lock bags according to however many portion sizes you need at a time. I do that with bread slices.
What's an alternative to cottage cheese? Yoghurt ok?
Yes, it’s mentioned in the description section you can use Greek yogurt, sour cream or a thick and creamy plain yogurt instead of cottage cheese 🙏
Can i use greek yogurt instead of cottage cheese?
Yes, you can use greek yogurt or even sour cream if you like 🙏
Do you cook the lentils first, or add them raw to the food processor?
No pre-cooking needed for this recipe, you just need to soak the lentils to get softer and lectins free. They have plenty time to cook while baking for ~40 minutes at 350°F 🙏
Is this good if you have diabetes?
I’m not a Doctor but I can give you my opinion based on what says some scientific studies “ Lentil consumption, in particular, consistently lowers acute blood glucose and insulin response when compared to starchy control foods”
www.ncbi.nlm.nih.gov/pmc/articles/PMC8877848/
Also, many diabetics people (themselves or their relatives) were thanking me for the recipe on Facebook because they find it a good alternative to starchy breads.
So, I would think, yes! Lentils is a good food for diabetics 🙏
How long does it stay fresh? Can they be frozen and reheated?
Like for any regular bread, they are at their best on day 1 but they stay in a great shape in the fridge for up to 1 weeks or in the freezer for three months!
Yes, you need to preheat them to retrieve softness and texture before you serve them 🙏
@@zaracooksthanks. I made them and they're delicious!

Does this have an eggu texture? This is something i am always watching for as most of these do and i dont care for it
Not at all! The taste is quite neutral, actually. You won’t notice the lentil nor the eggs aftertastes in the breads 🙏
@@zaracooks great! Sounds good I definitely excited to try it
I don't have mini loaf tin! Would an ordinary loaf tin work?
You can use a larger loaf pan (I have a vegan lentils loaf recipe already available here 👇), but you need to bake for a longer time (at least 1 hour, and check with the clean knife to verify if it’s well cooked through).
Or use a larger and wider baking pan (like a 21 cm large one), they will have a similar height (2 cm) as in the recipe here. You can cut the size you like 🙏
ruclips.net/video/zpbAeeAW2HA/видео.html
Do you have Texas muffin pans? Grease and line and fill about 1/3, you'll get like hamburger buns
I do not have a mini loaf pan. Can I use an ordinary loaf pan or a baking tray?
Yes, you can use a large baking tray. Just make sure you pour the batter no more than 2 cm high to get a similar texture as in here 🙏
@@zaracooks Thank you 😊
What can be used instead of cheese?
You can use sour cream, greek yogurt or just a thick and creamy plain yogurt of your choice 🙏
1 cup of red lentils, is that 250 gram ?
190 grams, it says it in the video description
Thank you 🙏 🤗
You said the recipe will work in a single, larger loaf pan. What size do you suggest? 8.5" x 4.5"? 9" x 5"?
It doesn’t matter the size, you just need to make sure you fill it only half way (maximum 2.5 to 3 cm height ) for results similar to the ones here in the video. If you fill up high, it might be more dense in the middle and requires more baking time (up to 1 hour) 🙏
Fantástico, pero no tires el agua, dásela diluida a tus plantas!. Verás la diferencia
😉
Another winner!! I made these in a shallow silicone mold and made them into burger buns. Oh my goodness, so amazing! I kept a few out and the rest in the freezer for later. ❤
Thank you for the feedback 🙏 I’m so glad to hear you too loved this recipe and are enjoying it just like we do every time we make it 🤗
They look good but I hope they are light and not dense and heavy.
They are relatively dense because of the lentils but I won’t say heavy. The bread overall is quite airy and delicious 🙏
@@zaracooks THANK YOU
Any chance you have or are developing an adaptation that is dairy free?
Yes, I’m thinking of a version totally vegan (egg and dairy free). Stay tuned 🙏
Hey Jody,
As you have requested a vegan version of lentils bread, I thought you’ll be interested to look at today’s recipe! For a change I made it as a large loaf, but you can adapt it with the veggies, herbs and spices of your choice and also make it as mini loafs if you wish. Hope you’ll enjoy 🙏

Any substitute for egg
You can skip it all together and add an extra 1/4 cup cottage cheese or other dairy product you’ll be using. Or, you can use an egg substitute like ´Just Egg’ for example 🙏
Is this keto friendly
Lentils are reach in carbs, I don’t think it’s allowed by keto diet 🙏
My lentils have been soaking for several days. Will they still work, or should I throw them out?
I’m thinking all these days soaking, they have probably sprouted 😅 You can use them rather for a salad or in a soup. Sorry to say, you need to soak (no more than 24 h) fresh ones for these wonderful breads 🙏🥰
I tried these last night, when cooked they were good with airy . But next day they became dense (lost airy). Can you let me know the mistake
That’s right, most breads made with legumes tend to get more denser over time. I usually put mine in a toaster oven for 5 mins. They almost get back the texture they have when just out of the oven 🙏
Can you freeze them? I mean will keep the texture if I put them into the freezer soon after they cooled down? Many thanks .
Yes, you can freeze them for up to 3 months. You just need to preheat them before serving 🙏
What could u use instead of cottage cheese plz👱🏻♀️🌸
You can replace cottage cheese with sour cream, Greek yogurt or a thick plain yogurt. Also, coconut cream is a good non dairy alternative 🙏
can i use only lentils+ water + baking powder?
Well, in theory, yes you can get a bread with just lentils, water and baking powder. Just be aware the bread will be more dense and less soft without the oil, the eggs and the cottage cheese (or other dairy or non dairy creamy product). 🙏
will adding butter make it less dense?@@zaracooks
@@chantelle5170 definitely, the butter will make it more soft but still it will be still denser than when you use eggs and dairy 🙏
In the description it says 687 calories.. that’s a lot 😮
Yes, that’s accurate. There are 687 calories in 1 cup (~192 g) of raw red lentils. Yes, legumes are rich in calories but also in macros, micronutrients, minerals, etc… You can check the number in Google.
cottage cheese in France is not called Fromage Cottage... its Fromage Blanc or fromage blanc maigre
Hey Keith,
Yes, you are right but in Quebec we call it fromage cottage 😅
Yes, I know some products may have different names depending where you are but overall, I don’t have much of European francophones among my viewers. This is being said, I’m always willing to answer questions and help as much as I can all my viewers worldwide 🙏🥰
Can i skip eggs? I'm vegetarian. And can i bake this on stove top method. I don't have microwave
Yes, you can. Just add an extra 1/3 or 1/4 cup of your dairy product (cottage cheese, sour cream or Greek yogurt) and it should be OK 🙏🥰
I don’t understand your question about the baking method! These mini breads are baked in the oven (not in a microwave). Baked in a preheated oven, for ~40 mins at 350°F 🙏
@@zaracooks I mean to say in my home I don't hv OTG or Oven.. Can I bake in kadai or cooker?
@@gouravsartandcraft240 whatever you use to bake your regular bread is good to use for these breads 🙏
Thank you for the video. Where did you buy the mold ?
You can find them online (Amazon) or look in the Home / Bakery section in any large supermarket 🙏
Can we make it as loaf of bread ? (Normal bread shape) and not as shortbread
Yes, absolutely. Just make sure you use rather a larger baking pan that the batter height won’t be too high. To guarantee an even baking through 🙏
Can I use this same recipe to make one big loaf bread?
Yes, certainly you can! Just make sure you use a large pan that the height of the batter won’t be too high (to make sure the bread isn’t too dense) 🙏
I made these and they taste great, but not sure why I can’t get mine to rise like that ☹️
Lentil is much denser than regular flour, so that it doesn’t rise too high. It will rise maximum like a 1/3 of what you pour. Also, may be the batter was a bit more runny than it should (you need to strain completely from water once you rinse, that can make the batter too wet and rather compact in the center). It takes some try and fail to get the best result. Then you will really enjoy how good and versatile working with red lentils can be 🙏
Bon recette

What’s the nutritional facts? Total carbs ,how sugars, salts?
I provide sometimes the calories per serving and some other macros and minerals (like protein. iron or calcium). I don’t have the time to do it for all macros unfortunately and I think it’s important that people do these calculations for themselves for better choices since they have the ingredient list.
But just to answer your request. The carbs in the recipe came mainly from the lentils (I used low fat cottage cheese, so it adds a little to the total carbs).
But, overall, you have ~20.2 g of carbs per loaf and 3.16 g fibre 🙏
Can you use canned lentils for this recipe?
I haven’t tried it myself to answer objectively, but I don’t think canned lentils are suited to make these breads, because it takes some starchy component you find only in the raw lentils 🙏
how do you get rid of the strong lentil smell which to me is the biggest turn off?
I find the lentil smell of these breads made with red lentils is way more soft than if made with regular lentils. But if you still find it overwhelming, you can add herbs and spices you love. For example dried oregano, fennel, cumin, etc
Can I use green lentils? Or would that change the texture or taste of the bread?
To have it this close to regular bread, it has to be red lentils, yellow lentils or mung beans (they have in common, being skinless). Regular lentils will give a texture, taste and colour quite different 🙏
I'm going shopping. I'm looking forward to making these. Do you know how many carbohydrates are in them please.?
I Hope you’ll like them 🙏
To answer your question here’s for you the numbers for all the Macros.
Macros for 1 mini bread are as follows:
Energy: 181 calories
Protein: 9.69 g
Fat: 9.61 g
Carbohydrates: 14.48 g
Fiber: 2.3 g
Iron: 2.23 mg
And if you have concerns about diabetes, you shouldn’t worry too much about the carbs since lentils and legumes in general are even beneficial for diabetics. They tend to decrease blood glucose (see the finding of this research) 👇

I tried it but it was not fluffy and no pores in the bread, do i need to add baking soda too?
Usually baking powder is sufficient and no need to add baking soda 🙏
Did you strained really well all the water after you rinsed? Because, if is a bit watery, it will be rather dense and won’t rise much!
@zaracooks yes I did as you had explained, may be my baking powder was old , will buy new one and try again.
@@sailajadamodaran yes, it’s also very important to use a fresh and effective baking powder! Be aware, red lentil is quite dense compared to regular flour, so the rising is modest too (they will rise like by maximum a 1/3 if the raw height) 🙏
Wonder if u could make 1.big loaf
Yes, you can 👍
Just make sure not to fill the pan too high (half way through will be best) or you have to bake for much longer than 40 mins because the lentil batter tends to be much denser 🙏
Je découvre et franchement je vais vous suivre 👏♥️
Merci 🙏 et bienvenue à vous 💓
Are they freezable, if not how long can they be stored before going bad?
You can either keep them in the fridge for up to 1 week or freeze them for a few weeks. They stay very nice. Just warm them up before serving 🙏
Could this be done as a tray bake like the chickpea one as i dont have these small loaf pans?
Yes, definitely, you can 👍🥰
Can you add honey or powdered sugar substitute to make this sweeter? The honey would add more liquid, maybe I can lessen the cottage cheese?
You can try it. That’s the best part of cooking, you can try new things and see how they work 🙏
Can I substitute cottage cheese with yogurt? Stupid question, I know but still
Yes, definitely, you can 👍 It’s mentioned in the ingredient list 😅
@@zaracooks opps! Thank you ❤️
I don't have a mini loaf pan. Does it work if you pour all the batter in a regular loaf pan? Does it cook all the way through in such a much thicker larger loaf?
Yes, you can. I would recommend not to fill the large loaf pan too high (slightly above the middle will be great) to make sure they cook well in the center. The cooking time, I thing 45 to 50 mins is still OK 🙏
@@zaracooks Thank you!!
Cheese is curd ? Or paneer
I’m not familiar with Indian paneer, but the cottage cheese I’m using is made from curdled milk! You can also substitute it here in the recipe with sour cream, Greek yogurt or even a regular thick yogurt 🙏
@@zaracooks Thank you
Can I use green lentils? I think they taste the same no?
You can try if you wish but I don’t recommend it. The presence of the lentils skin (that’s the only difference with red lentils) won’t give the same shape, taste or texture!
can I substitute the cottage cheese with skir?
Yes, you can use any yogurt of your choice 🙏
Do you think it can work with a waffle iron?
Yes, it will! People from my FB audience have tried to make pancakes and waffles out of this batter and were very happy with the result 🙏

Can u blend this with a hand blender and can u used different oil?;
As far as the batter is really smooth, that’s OK to use a hand blender (some are really powerful). And, yes, to me olive oil is at the top of what I prefer to use, but you can use any other oil you prefer 🙏
I am not allowed to use dairy and am allergic to soy... What do you suggest to use instead of cottage cheese or can I just leave it out?
Coconut cream is fantastic for this recipe or any creamy thick non dairy yogurt product you love will be a good substitute 🙏🥰
Thank you very much. I just left it out and they are really good. I used 3 eggs and 10 gr, baking powder
Had the same problem a few have mentioned. The loaves looked great at 20 minutes when I turned them in the oven to make sure everything was baking evenly. They rose and looked great. At the end of another 20 minutes they had fallen. I let them cool and sliced one open and it was a bit dense inside. Not sure what to try differently. I soaked the lentils over night in the fridge. I rinsed and let them sit for 30 minutes in the strainer to make sure they were well drained. I mixed until very smooth. Over mixing is the only thing I can think happened.
Sorry Julianna, to hear that 🙏
I can see that you followed all the recommendations to get the best results with these lentil breads and, yet 😢
Since you said they rose and fall, I’m only thinking of the baking powder. Is it fresh enough? Or the heat, was the oven preheated before that it won’t heat up too high at the beginning before temperature goes more constant?
I really can’t explain how much easy, I found it, working with this lentils batter (yes, it’s a bit dense but it’s very easy to work with)! I’m experimenting a sweet version, and despite many mistakes, the result is always amazing (great shape and texture like with regular flour each time) 🙏
@@zaracooks oven was definitely preheated. Pretty sure baking powder is fine as I haven't had anything not rise. Since it rose and fell, I don't that that was it. I'm thinking I'll try to use the blender to puree the lentils and cottage cheese. Then maybe Mixon the egg more gently. Perhaps best the egg whites separately and fold them in? Not sure. Whatever 8 did, they did not hold their structure. I have the rest of the package of lentils to try again. The taste is good so I'm not giving up!
Glad to hear you’re not giving up 👍❤️
Let me informed how it’ll go next time 🙏

Also, when you put the batter in your mini loaf tin, would you say you filled them half way?
Yes, you can use a regular muffin pan. They may need slightly more time to bake thoroughly (45 to 50 mins). Try the clean knife after 40 mins baking to check.
Yes, exactly, I filled about half the loaf cups with the batter 🙏
Can i use other tipe of lentils?
You can use yellow lentils or skinless mung beans but not regular lentils (with skin).
Otherwise you can check the chickpea bread recipe here 🙏🥰👇

Wow! Can we use an air fryer to bake these little cuties :)
Yes, you can use an air fryer to bake these lentil breads just like you will do when you bake your regular muffins or cupcakes (you can use individual baking cups) 🙏
