To answer your question, yes the power armor suits are all practical, and according to the stuntmen they were surprisingly easy to move around in considering their size
5:27 the turret is a mk 1 turret. In game, they are absolutely horrible at hitting anything unless you have several pointing to the same direction so you can have accuracy by volume.

There's the full walkable suit that a stunt man uses while Aaron Moten (Maximus) does the voice acting., There's a top-only suit that Aaron wears for the Maximus scenes, and I think there's one other they use for other shots.
The ghoul was using V.A.T.S. the whole time on the disposable enemies. That's why you were seeing slow motion during the kill shots; it's what happens when you use V.A.T.S. and get critical hits that result in instant kills in the video games.

I think as smart as Wilzig was, why did he not start telling her as much as he could about the wasteland if not more, I mean he wanted her to make it across to Moldavar right.
People have decided a lot of the dumb stuff in this show (i.e. the turret firing hundreds of rounds point blank and missing them all) is actually a reference to Fallout 4, which I think kind of just illuminates that Fallout 4 was dumb.

Wilzig worked at the Enclave, which is basically the remnants of the government, and is all kinds of shady. Seems he was too empathetic to be there.
