There was two more details I noticed during the Deadpool Corps fight. But if you pay attention to Cowboy Deadpool, he actually tries to run away several times and even throws another Deadpool in front of him on the bus to try and buy time to escape through the roof. There was also another Deadpool on the bus that just gives up and shoots himself in the head from fear before he can be killed.

Separating bones is not the same as breaking them
The bones were indestructable, the joints were not. In order to still be able to bend, his skeleton would require soft tissue between the bones.
