Heck, I'll take him a step further and suggest literal picante' queso sauce on top of them. Like the queso with sausage type sauce you'd serve as a dip at a football game.
So True. The best part of running a restaurant is knowing how to work with so many personalities who may not always lend themselves to following the program. When to crack down, when to lighten up. You can never buy that in school. That's why so many restaurants fail even though they have the talent.

Awesome man them fresh beans will make the difference. Too many authentic restaurants use too much canned beans and store bought torts . Man them beans made me want a chicharone deep fried with a fresh tort with some cheese and green Chile , fresh on all ingredients. Great job there jack looks delish my dude

The only thing I'd switch out is some roasted Hatch green chiles for that pico. But I'm a New Mexico boy so I'm crazy like that. Maybe put it all on top of a corn tortilla or two.

Nice recipe for the Kato version. Might try it with a basted version on the eggs (steamed). Been noticing your stove area with the black soot. Likely due to the burners being too Rich, not enough air mixture with the gas valves. The flames aren't as hot when the burners are rich, identified by the orange flames vs. nice clear blue flames. Jack, looks like you are losing some weight, very cool.

I have 2 specific pans for eggs in my house. NOBODY is allowed to cook anything but eggs in those pans- I have them seasoned to the perfect nonstick...LOL
Can someone explain how it always appears that he has the fire all the way turned up, yet his pans never get hot. His pan was engulfed in flames, but the eggs were slow cooked.
Because a gas range needs to be serviced and calibrated every so often, and you mix that and Daddy Jack's hood system and the fact you normally see box fans in his kitchen, means those flames are blowing all over the place, as you can see if you pay attention to what's going on underneath these pans. Its causing the flames to put out less heat than if it was dead air..
I am wondering that same thing ever since I've watched his first video! High heat with those flames licking up the sides of the pan and the food barely simmers!!

Yeah, exactly my question. My stove top has tiny rings, and they are mega aggressive. Difficult to get a mild simmer.

Closer to eggs a la mexicana than huevos rancheros but hey to each his own. Regardless, I'm sure it tastes great.
