They probably have a 4-5 person team and didn't expect the high amount of people in such a short amount of time! good things take time and people need to realize they aren't a chain restaurant! i hope youll be able to have another chance
I don't know the cooks for this review to be honest, however I've tried them(tacos) and the they to me were average. Not taking any merits away, because every thing from "scratch". Being that I'm a local, the restaurant is out of the traditional northern Mexican street taco theme. I tried them once not looking forward for the second time, but I will do it to give her another opportunity. From a international stand point she deserves her awards for the hustle. A solid 5/10 for the taco and salsa. I believe the local regulations in the kitchen take away from the intent of the chef.
I'm sure her Tacos are wonderful but come on, they're Tacos. What is the criteria to to be a James Beard awarded winner anyway? I've eaten hundreds of tacos' from restaurants and food carts from all over, and never had a bad taco.

Never had a bad taco? Check out Molcas Taqueria on Salinas in Donna if you’re in the RGV 😆 hit or miss ratio of about 60/40 there last couple years
