- Rou Jia Mo (肉夹馍) is a very popular snack in Xi'an's Muslim Quarter. You can choose to have either mutton or beef in your sandwich. Choice cuts of stewed meat is first selected from a pot and then finely chopped into small pieces and stuffed into a dry wheat bun. A spoonful of meaty juices from the same aforementioned pot is then drizzled onto the sandwich. Tasty!

What makes me mad is that it's not necessary to handle the food this loosely, they don't need to chop that hard that everythings flying around, they can put down the knife normally, not half-chop the wood everytime. They don't even seem to be poor, they totally can buy new cuttingboard and outside the cooking setup, they seem pretty clean, they definitely can clean up the tabletop more often.
It's infuriating because it seems these people are doing this on purpose
To be honest, they do need a new chopping board. At least clean up the damn place lol. You surely wont die or the food wont taste bad but it doesnt a good presentation.

easily to make in States. Muffin+ pull pork+ sauce, the core is the beef stew broth, if you can make beef stew yourself, just use the broth. taste different but close

It looks unhygienic, but it's all fresh hot meat (the chef is a bit messy...). Also, at 5:40, you see that the work station is much tidier than at the begin of the video. They clean up a few times (prolly when it's not so busy anymore).
