In North America we tend to make our Waffles using an artificial leavener, that is, with baking powder and/or baking soda. But there is another way, and that is to make Waffles using yeast. This type of Waffle has a mild "yeast" flavor. Their outside crust is wonderfully brown and crisp, yet inside they are light and fluffy.

I followed your recipe to the letter, and all my family loved your waffles! I was worried that the waffles wouldn't be sweet enough for my sugar-addicted kids (who eat their waffles plain), but my kids almost ate up the entire batch - leaving little for my husband, who loved the left overs as well - perfect with a spot of maple! I generally don't like using my waffle iron, as things tend to stick and burn, but thanks to your generous butter allowance, the waffles didn't stick to my iron, and that is even when I didn't even bother to grease my iron before adding the batter. This is a perfect recipe that I will be sticking to next time I make waffles, and I won't be changing a thing from your measurements! The minimal amount of sugar and high fat content for the waffles is perfect for my family, and my waffle maker. Thanks again Stephanie for another perfect and precise recipe. It really made waffle making tear-free for this happy baker! As we bakers know, that's not always the case! P.S. could you do a sourdough waffle recipe one day...? I'll be watching... : - )

Always wondered why I wasn't crazy about the regular way of making belgian waffles, until I started to read about using yeast to make them. After I pour the batter onto the waffle iron, I like to add a good tablespoon or more of the small frozen Maine blueberries on the top of the batter. They cook right into the waffle, and I end up freezing the rest of the waffles to use in my toaster oven at a later date!!

The best waffles
As an experienced home baker (especially breads) i can say that every dry yeast can be mixed with dry ingredients without proofing. Maybe it's different with the yeast they sell in the USA though.

Mam if I have a large amount of instant yeast and our environment temperature is 30 to 40 degree centigrade then where should I store it ? I have seal pack of instant yeast can I store it in freezer compartment of refrigerator to increase it shelf life?

Can I use the batter right away if I don't let it sit in the fridge overnight?
As I say in the video, at about the 5 minute mark, you can make the batter and then let it sit, covered, at room temperature, for about an hour, or until it rises and gets bubbles on the top of the batter.

Active dry has to be proofed. The package will say.
