- Szechuan Preserved Vegetables 四川榨菜 is a strong salt preserved vegetable. Some very popular dishes like Szechaun vegetable soup, fried pork, steam fish.
Mostly available in local wet market in original raw form (like a ball shape). Those you have to soak and wash to remove excess saltiness.
The ones that come in packed form are easier for me. Just unpack and use right away.
If I wanna make soup, I will use the raw form.

Here I stir fry with pork. You can stir fry with any meat or even tofu. Or you can just stir fry with other vegetables like carrot, celery, etc.
It’s a salty vegetable, so very light seasoning. Add water to simmer for 10mins to release all the awesome taste.
Here's what you need:
Pork Loin 300 grams
Szechuan
Preserved Vegetables 200 grams
Tomato 1
Red capsicum Half (julienne)
Old ginger 5 cm
Spring onion 2 stalks
Pork seasoning:
Oyster Sauce 1 tbsp
Light Soy Sauce 1 tbsp
Dark Soy Sauce 1 tsp
Sesame Oil 1 tsp
Pepper 1 tsp
Sugar 1 tsp
Cornstarch 1 tbsp
Seasoning:
Light Soy Sauce 1/2 tsp
Dark Soy Sauce 1/2 tsp
Pepper 1 tsp
Cooking Wine 1 tsp Хобби
